These Vanilla No Bake Cookies are so easy to make and have the perfect balance of flavor. Sweet but not too sweet and the best texture, you can’t go wrong!
If you’re anything like me, you probably have been making, or at least eating No Bake Cookies since you were a kid. They’re the easiest to learn to make from scratch and you don’t have to worry about the oven.
The hardest part is waiting for them to set up for the full hour! But in the end its well worth it.
But, most people make chocolate no bake cookies and while they’re tasty and all, these Vanilla No Bake Cookies are where it’s at.
These Vanilla No Bake Cookies are simple and remind me of sugar cookies, but they’re not too overbearing. The sprinkles really set them above the rest and help add to the amazing texture.

INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM)
Salted butter
Granulated sugar
Whole milk
Vanilla extract
Oats
Powdered milk
Instant cheesecake or vanilla pudding, unprepared
Sprinkles, optional topping
HOW TO MAKE VANILLA NO BAKE COOKIES, STEP BY STEP:
- Line a large baking sheet with parchment paper and set aside.
- In a large saucepan, add the butter, sugar, and milk over and cook on medium-high heat.
- Bring to a rolling boil and boil for 1 minute stirring constantly.
- Remove from heat then add in the vanilla, oatmeal, powdered milk, and dry pudding mix.
- Stir quickly until fully combined.
- Use a medium cookie scoop or your mixing spoon to drop the mixture onto parchment paper.
- Top with sprinkles, if desired.
- Allow the cookies to sit for 1 hour to firm up.
WHY DID MY NO BAKE COOKIES NOT SET UP?
If your cookies didn’t set properly, it’s most likely that you didn’t boil the butter and sugar mixture long enough. It needs to become the proper texture so the cookies can set up correctly.
Mixing constantly when you add the oats and pudding is also important as well as the chill time.
HOW MANY COOKIES DOES THIS MAKE?
We usually get about 24 cookies out of this recipe. However, this can change vastly depending on the size of your cookies.
Want larger cookies? Then you’ll get less cookies from one batch. If you want mini cookies, you’ll end up with more.
WHAT OTHER ADDITIONS CAN I ADD?
You can certainly add other things to these no bake cookies, just be careful how much you add so it all sets properly.
We like to add mini chocolate chips, mini marshmallows, and chopped nuts. Pick any other ideas and give them a try.
HOW TO STORE:
Store these Vanilla No Bake Cookies in an airtight container at room temperature for up to 7-10 days.
You can store these cookies in the freezer for up to 3 months. Once the cookies have set, place them in a freezer safe container with parchment paper in between the layers to prevent them from sticking.
