Easy, packed with peanut butter, oats, chocolate chips, honey and more these No Bake Energy Bites are a quick and delicious grab and go snack to fuel you up!
Quick and easy treats are key around here. We are on the go a lot during the school year and now that Summer is fast approaching we will be going almost daily for baseball season, so we live off of quick and easy snack and dinner recipes.
These Energy Bites are packed full of goodness and one of my kids favorite grab and go goodies. We also love to grab these Bacon Parmesan Crisps and these Funfetti Granola Bars!
INGREDIENTS YOU NEED:
- Old fashioned oats
- Coconut
- Ground flax seed
- Mini chocolate chips
- Honey
- Peanut butter
- Vanilla
- Cinnamon
This is a no-bake recipe which we absolutely love. There is nothing better when you can whip up something that is so versatile meaning breakfast, snacks and dessert in such short of time.
One really good things about this is the the flavor of everything together absolutely works so well together. We’ve been making these for years, I like to eat them for a pre and post workout snack, they are packed full of all the goodness I crave.
WHAT MAKES THESE ENERGY BITES GIVE ENERGY?
This is probably a question on everyones mine, why are these called energy bites? Well they are packed with whole food, fiber and protein.
Between the oats, flaxseed and peanut butter you have a great combination of fuel for your body, so its one of those things that are perfect to grab along and snack on when you are feeling a little sluggish.
They also fill you up super fast, so it doesn’t take too many of them to really satisfy your craving.
I know what you’re thinking with these, Alli…you’re the sugary dessert lady that lives off of cakes and bars and cookies, what is up with these Energy Bites.
Well my friends, I don’t always have to live off of sugary stuff. A lot of the time I do like to eat healthier when I can. Now I don’t stick by any diet by any means, I wholeheartedly believe everything moderation.
And that just happens to include some healthier desserts or snacks some of the time, so I wanted to share these with you because I really think that you will love them.
One fun thing is that kids really love them, they really don’t understand that they are good for you and packed with the good stuff that your body wants, they pretty much just think it’s an oatmeal cookie in a ball form! But I won’t try to convince them otherwise.
HOW TO MAKE ENERGY BITES:
- Place all ingredients in bowl and stir to combined.
- Cover and replace in refrigerator for about 30 minutes to stiffen up slightly.
- Remove from refrigerator and shape into about 1″- 1 1/2″ balls, serve immediately or keep stored in refrigerator until ready to snack on.
We usually pack a few of these energy balls in our kids lunches instead of those sugar filled little Debbie snacks, so far they have never complained when we do that. They are big fans of granola bars and these also resemble those as well.
I hope that I’ve convinced you to try out these No Bake Energy Bites, they are really seriously amazingly good. They are almost hard to stop eating, but yet you don’t feel guilty eating them either.
TIPS AND TRICKS:
- We like to use mini chocolate chips in this recipe, but you can use regular, you can also switch them out for dark chocolate chips.
- Add a little chia seeds to the mixture to incorporate another superfood in this recipe.
- Use sweetened and unsweetened coconut, depending on how healthy you want these energy balls.
- You can use organic, natural or regular peanut butter, you can also use chunky peanut butter or almond butter for a different flavor as well.
No Bake Energy Bites
Ingredients
- 1 cup old fashioned oats
- 2/3 cup coconut flakes sweetened or unsweetened
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed
- 1/3 cup honey
- 1/2 cup mini chocolate chips
- 1/2-1 tsp cinnamon
- 1 tsp vanilla
