Summer is fast approaching, and while we have been having days that feel like we are in the middle of summer I’m not going to complain one bit. This is my favorite time of year, not only because it’s warm, but because there is just so much to do around here.

Southwest Tuna Chopped Salad
Ingredients
- 3 heads romaine lettuce chopped
- 1 cup corn
- 1 cup black beans
- 1 avocado chopped
- 1 cup sliced cherry or grape tomaotes

- 1 container chipotle ranch dressing
Instructions
- Add all ingredients to large bowl and toss together until evenly coated. Refrigerate until ready to serve.
