Summer is fast approaching, and while we have been having days that feel like we are in the middle of summer I’m not going to complain one bit. This is my favorite time of year, not only because it’s warm, but because there is just so much to do around here.

We like to stay as active as possible and since we come from Minnesota and it gets brutally cold in the winters, we really take advantage of the warm seasons that we do get to get out of the house and enjoy the great outdoors.

  • 3 heads romaine lettuce chopped
  • 1 cup corn
  • 1 cup black beans
  • 1 avocado chopped
  • 1 cup sliced cherry or grape tomaotes
  • 2 packages StarKist Selects E.V.O.O.™ Yellowfin Tuna
  • 1 container chipotle ranch dressing
Instructions
  1. Add all ingredients to large bowl and toss together until evenly coated. Refrigerate until ready to serve.
