You guy’s, its mid August and you know what that means!! PUMPKIN! Yes, we bust out the pumpkin recipes this month, why? Because we can! No just kidding, we do it because by the time people are wanting to search for pumpkin we will already have plenty of new stuff out there for people to find! And I’m starting this years pumpkin season off with this addicting breakfast of Slow Cooker Pumpkin Steel Cut Oats!
I love breakfasts where I don’t really have to do much work. If I can just dump something in a bowl or a pan and I’m good to go then those are pretty much the ones that I love to stick with! At the beginning of the year my resolution for the blog was to bring you guys some more breakfast recipes since I wasn’t the biggest breakfast person of all time the way it is and these Slow Cooker Pumpkin Steel Cut Oats are the perfect addition to the list!
If you don’t work with steel cut outs often or if you’ve never heard of them you’re missing out! Although they usually take a bit longer to cook then instant, rolled or old fashioned they have a richer nuttier flavor and the texture and size are much smaller. We love to use them in our oatmeals which they are traditionally used for. So for this pumpkin version it was amazing, no doubt!
My secret ingredient for this delicious oatmeal was using Rodelle brand Pumpkin Spice extract! It added that little extra kick of pumpkin that it needed for sure! If you don’t have pumpkin spice extract on hand you absolutely to get yourself some! It is such a nice thing to have on hand for fall baking!

Sprinkle with some brown sugar and chopped pecans and it really takes it over the top. I love the added pecans for a little bit more texture and crunch and a sprinkle of pumpkin pie spice and brown sugar really give it a nice sweet rich flavor!

Slow Cooker Pumpkin Steel Cut Oats
Ingredients
- 1 1/2 cup steel cut oats
- 5 cups water
- 1 cup milk
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1 1/2 tsp pumpkin pie spice
- 1 tsp pumpkin spice extract
- 1 tsp vanilla
- pinch of salt
- Chopped pecans
- Extra brown sugar
Instructions
- Combine your oats, water, milk, pumpkin, brown sugar, syrup, extracts and salt into a crock pot and stir until combined.
- Cover and cook on low for 8-10 hours.
- Remove lid and stir.
- Serve with chopped pecans and brown sugar.
