Who can resist the salted caramel? Throw in a little banana a chocolate while you’re at it and you have yourself these irresistible Salted Caramel Banana Chocolate Chip Cookies.
So Spring Break starts today for my kids. I still have today and all next week off from my daycare kids as well. So it’s just going to be my boys and me (and princess) bumming around. I actually am one of those parents who cannot wait for Summer to finally arrive, I absolutely love having my kids home with me!
I know I sound weird right? Well when you do what I do and you’re alone the majority of the time alone, the company of even your children is the most comforting thing in the world. I mean yeah I have my daughter home with me, but in all honesty I can only talk about Barbie and Chase’s Corner for so long before I get annoyed…
But with my daughter just here we are able to constantly create in the kitchen! The latest in are arsenal are these highly addicting Salted Caramel Banana Chocolate Chip Cookies. Now that’s a mouthful, literally and figuratively. But these have quickly become one of my absolute favorite cookies.
As you all know I’m addicted to all things banana. You HAVE to check out my Banana Cream Cake, Banana Cream Cake and these every delicious Banana Cream Lofthouse Style Cookies. In all honesty, just search banana in my search bar and I’m sure no less than 10 recipes will pop up for your ever-loving banana enjoyment. I mean seriously, one of the best things to bake with EVER.
So I love the flavors of banana and caramel together. I mean Bananas Foster everything is one of my faves. So In these cookies it totally works. I also love banana and chocolate together, um…who doesn’t amiright?!?! So obviously I had to add a little it of that in there, so I figured all the flavors in these Salted Caramel Banana Chocolate Chip Cookies were just going to work together and by golly they sure did!
So in my fashion I do like to keep things easy peasy around here. Now cookies are usually always easy unless of course you’re making yourself some macaroons or something of the like (have not tried making, don’t know if I ever will). So I wasn’t going to give you anything that you’d fail at. The recipe is pretty straight forward, and guess what. The batter doesn’t have any eggs in it…you know what that means right! EAT IT ALL!
Now I know some people have a thing with not eating raw flour, but I have been eating raw cookie dough since I was a kid and I’m not going to stop any time soon…so theres that. I kinda actually like the batter more than the cookie itself…I know I’m horrible, but that’s literally how it is with any recipe I use with bananas! It’s horrible ugh!
So if you want a fun cookie that has a boatload of flavors that seriously work magic paired with one another than these Salted Caramel Banana Chocolate Chip Cookies are just what you’re needing this minute!
Salted Caramel Banana Chocolate Chip Cookies
Ingredients
- 1/2 cup butter , softened
- 3/4 cup brown sugar
- 1/2 cup sugar
- 2 bananas , mashed
- 2 tsp vanilla paste (or vanilla extract)
- 2 cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 Tbs cornstarch
- 1/2 tsp salt
- 1 cup chocolate chips
- 1/2 cup caramel bits
- Sea salt
Instructions
- Preheat oven to 375.
- In bowl beat together your butter and sugars until smooth.
- Add in your banana and vanilla and continue to beat until combined.
- In another bowl whisk together your flour, baking soda, baking powder, cornstarch and salt.
- Add your dry ingredients to your wet and stir until just combined.
- Fold in your chocolate chips and caramel bits.
- On a silpat lined baking sheet using a cookie scoop or rounded Tablespoon add your cookie dough.
- Sprinkle with sea salt and bake for about 10 minutes or until slightly golden.
- Remove from oven and let cool on pan for about 5 minutes before transferring to wire rack to cool completely.

I made these tonight and oh my! These are really good. I’ve convinced myself their on the healthier side because of the bananas in them ๐.
I did bake mine for 10 minutes, nice and soft. Is that because of the cornstarch in them?

Cornstarch softens harsh proteins that can be found in flours so it makes them softer! I’m so happy you liked these ๐
