These are great for entertaining but are simple enough for everyday snacks or lunchtime. I love how versatile they can be and my family loves when I make them for absolutely any reason.
Out of all the pinwheel recipes that I have made and have shared on my site, these have to honestly be one of my favorite ones hands down.

INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM):
Cream cheese
Sour cream
Shredded cooked chicken
Shredded sharp cheddar cheese
Green onions
Green bell pepper
Red bell pepper
Fresh cilantro
Taco seasoning
Burrito-sized tortillas
Salsa for serving, optional
Guacamole for serving, optional
HOW TO MAKE MEXICAN PINWHEELS, STEP BY STEP:
- In a large bowl, beat the cream cheese and sour cream together with a hand mixer until smooth.
- Add the chicken, cheddar cheese, green onions, green bell pepper, red bell pepper, cilantro, and taco seasoning together. Mix until combined.
- Place a tortilla on a clean work surface and spread 1/4th of the filling onto the tortilla, leaving about ยฝ inch border along the edge.
- Roll tightly into a to form a log. Repeat with the remaining tortillas and filling.
- Wrap the logs tightly in plastic wrap, fold the ends of the plastic wrap under. Place in the fridge for at least 4 hours, or best overnight.
- Unwrap the pinwheels from the plastic. Cut into ยฝ inch slices, and serve with salsa and guacamole, optional.
HOW CAN I SPICE THESE UP?
If you like some heat, try adding some of your favorite hot sauce to the pinwheel mixture, or have some out for dipping. You can also add cayenne pepper or some jalapenos to the mixture.
You can also use spicy taco seasoning if you want as well for an easier way to spice these pinwheels up!
WHAT OTHER VEGETABLES CAN I USE?
Want some more vegetables in your pinwheels? I have some great ones that go amazing with Mexican flavor, try adding some corn, black beans, roasted peppers, red onion. or poblano peppers. Any of those, or any combos would compliment the flavor nicely.
DO I HAVE TO USE CHICKEN?
I have not tested these with other meats so I cannot tell you how they would taste. You can make these vegetarian by omitting the chicken and using more vegetables and cheese in its place.
HOW TO STORE:
Place your pinwheels in an airtight container and keep them in the refrigerator for up to 3 days.
You can even freeze these for up to 3 months. I like to flash freeze these and place them in a freezer safe container with parchment paper between layers so they don’t all get stuck together.
Defrost in the refrigerator overnight until thawed, you can just grab as much as you’d like and defrost that way and serve.

- You can make these vegetarian if desired.
