This Loaded Potato Meatloaf Casserole is one of mine! Meatloaf bottom, mashed potatoes, melted cheese, bacon and green onions.
How can you get better than that! This is always a hit in our house for dinnertime and when it comes to an easy beef recipe.
The best part is that this is great all year round, and it’s super easy to throw together and done in under an hour!
We love quick and easy meals and if it is easy to put together and is done in a reasonable amount of time, it’s on our rotating menu.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Lean ground beef
Plain breadcrumbs
Eggs
Worcestershire sauce
Yellow onion
Garlic powder
Onion powder
Dried parsley
Salt
Black pepper
Instant mashed potatoes
Medium cheddar cheese
Bacon
Fresh parsley or chives, diced
HOW TO MAKE LOADED POTATO MEATLOAF CASSEROLE, STEP BY STEP:
- Preheat oven to 400 degrees F.
- Add beef, breadcrumbs, eggs, Worcestershire sauce, onion, garlic powder, onion powder to a large mixing bowl.
- Using your hands, mix everything together but do not overmix.
- Press meatloaf mixture into bottom of a 9×13-inch baking dish.
- Spread the prepared mashed potatoes over top of meatloaf layer.
- Sprinkle cheese then bacon crumbles over top of potatoes.
- Cover with foil and bake for 25 minutes.
- Uncover and bake for an additional 10 minutes.
- Remove from oven and let cool slightly, top with fresh parsley or chives, cut and serve.
CAN I USE A DIFFERENT KIND OF MEAT?
Yes, while ground beef is amazing with this recipe we do realize that not everyone enjoys it.
You can substitute ground turkey or chicken for the ground beef. It will taste slightly different but still be great!
WHAT OTHER CHEESE CAN I USE?
First off you will want to use freshly shredded cheese as it is best at melting and doesn’t have the preservatives that bagged cheese has.
Cheddar is our go-to for this recipe, but switching it up is always a fun option when trying to achieve another flavor. Some ideas include:
- Colby Jack
- Monterey Jack
- Pepper Jack
- White Cheddar
- American
- Gruyere
Use what you like, or have on hand. Switch it up when you make it each time and find what you like best.
CAN I HALVE THIS RECIPE?
Absolutely, if you are working with a smaller family, yourself or just 2 people you can cut this recipe in half.
Just halve all the ingredients and make it in an 8×8-inch or 9×9-inch baking dish. The cooking time may go down slightly.
I would suggest probing the meat with a meat thermometer to make sure that it is cooked to 165 degrees F.
CAN I MAKE HOMEMADE MASHED POTATOES?
If you are not a fan of boxed mashed potatoes, you can make your own homemade mashed potato recipe if you’d like.
Just make sure that it makes enough that is called for in this recipe and we like ours creamy, but having little chunks in there won’t hurt it at all!
HOW TO STORE:
This can be stored in an airtight container in the refrigerator where it will keep for up to 3-4 days.
You can also freeze this recipe. Place in a freezer container and it will keep in the freezer for up to 3 months.
To defrost, remove from the freezer into the refrigerator overnight or until fully thawed.
Reheat in the microwave until heated through and enjoy!
TIPS AND TRICKS:
- Make sure you are using a leaner ground beef so it does not shrink as much and doesn’t have a ton of grease
- You can use ground chicken or turkey in place of the ground beef.
- Switch up your cheese, see above for some ideas.
- Make your own homemade mashed potatoes.
