Loaded Potato Meatloaf Casserole

- 2 pounds lean ground beef thawed
- 2/3 cup plain breadcrumbs
- 2 large eggs
- 1 Tablespoon Worcestershire sauce
- ½ cup yellow onion diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried parsley
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 6 cups instant mashed potatoes prepared using package directions
- 2 cups medium cheddar cheese shredded
- ½ pound bacon cooked and crumbled
- 2 Tablespoons fresh parsley or chives diced
Preheat oven to 400 degrees F.
Add beef, breadcrumbs, eggs, Worcestershire sauce, onion, garlic powder, onion powder to a large mixing bowl.
Using your hands, mix everything together but do not overmix.
Press meatloaf mixture into bottom of a 9x13-inch baking dish.
Spread the prepared mashed potatoes over top of meatloaf layer.
Sprinkle cheese then bacon crumbles over top of potatoes.
Cover with foil and bake for 25 minutes.
Uncover and bake for an additional 10 minutes.
Remove from oven and let cool slightly, top with fresh parsley or chives, cut and serve.
- Make sure you are using a leaner ground beef so it does not shrink as much and doesn't have a ton of grease
- You can use ground chicken or turkey in place of the ground beef.
