A delicious comfort hit, this Instant Pot Meatloaf is super easy to prepare, serves a crowd and makes the perfect dinner time meal for any night of the week.
I love my instant pot, I don’t use it as much as I should but it is one of those kitchen gadgets that I love having around and using when I get the chance.
Meatloaf has long been one of my favorite meals since I was a kid. I could eat meatloaf everyday if I had the chance and that is NO JOKE.
It’s so full of flavor and this Instant Pot Meatloaf is one of my favorites! You don’t have to bake in a traditional loaf pan so it is so much easier to drain the grease.
I’m lucky enough to have a whole meatloaf loving family and out of the many that I make I think this Instant Pot Meatloaf is one of our favorite dinners.
The preparation is so simple that I can’t not make it, and if I don’t have to heat up my oven then that is awesome too. Although it is cold right now, I still am happy when that happen.
Also this makes minimal dishes! Who doesn’t love minimal dishes, I know that is always a huge selling point for me when it comes to cooking which makes the instant pot a great option.

WHY THIS RECIPE WORKS:
- This recipe is easily adaptable and you can add your favorite mix-ins.
- The glaze on here really gives it a tasty flavor.
- It is the right size to feed a whole family!
INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM):
Ground beef
Onion
Eggs
Breadcrumbs
Garlic
Milk
Italian seasoning
Parsley
Salt
Pepper
Ketchup
Brown sugar
Worcestershire sauce
HOW TO MAKE INSTANT POT MEATLOAF, STEP BY STEP:
- In a large bowl, using your hands or a spoon, gently mix ground beef, onion, eggs, breadcrumbs, garlic, milk, italian seasoning, parsley, salt, pepper, and ketchup. Do not overmix or it will create a tough loaf.
- Shape this mixture into a round loaf. Place it on a large piece of tin foil. Create a loaf pan around the loaf by crimping the edges of the foil around the meatloaf. It should be about the size of the instant pot trivet.
- Put the trivet into the instant pot. Make sure the handles are pointed up to make the loaf easier to remove later. Place ยฝ cup of water into the instant pot, then put the meatloaf onto the trivet. Lock the lid into place. Pressure cook on high power for 40 minutes. When cooking time is over, you may use the quick release.
- While the pressure is releasing, make the glaze. In a small bowl, whisk together ketchup, brown sugar, and worcestershire sauce.
- Remove the meatloaf from the instant pot. Drain any excess grease.
- Place it on a baking sheet and spread the glaze all over it. (If there is extra glaze, save it for later.)
- Broil the meatloaf for 5-7 minutes, or until the glaze is bubbly.
IT DOESN’T LOOK COOKED, HOW CAN I MAKE SURE THAT IT IS?
When it comes out of the instant pot you are not going to get that same browning as you would if you were to bake this.
To make sure that it is cooked fully, use an instant read kitchen thermometer and if the internal temperature reads 160 degrees F it is done!
CAN I BAKE THIS MEATLOAF?
Yes you absolutely can! To do this follow all the instructions still using the foil but placing on a sheet pan. Bake in a 350 degree F oven for 1 hour. Brush with glaze and broil according to this recipe.
CAN THIS BE MADE IN THE SLOW COOKER?
Absolutely, again just like oven and instant pot use the foil, you can line your slow cooker with mor foil so it is easy to remove as well.
Place meatloaf in the slow cooker and you can cook this at 3 hours on high or 6 hours on low. Then again broil glaze like the directions say in this recipe.
HOW TO STORE:
If you have any leftovers this can be stored in an airtight container in the refrigerator where it will keep for up to 3-4 days, reheat in the microwave.
This can also be frozen before and after baking the same way. Place meatloaf in a freezer container or bag and it should keep for up to 3 months.
Remove from freezer and let defrost overnight in the refrigerator. If defrosting before baking, bake according to instructions. If defrosting after baking, reheat in microwave.
