Grilling season is in full swing around here and you cannot go without these Grilled Italian Sausage Sandwiches. They are a favorite of ours and we make them any chance that we get.
With readily available ingredients, these come together with minimal effort. Loaded with italian sausage, bell peppers, onions, seasonings, marinara sauce and cheese, you really cannot go wrong.
When I say that these sandwiches are hearty – they really are, and they are perfect for lunch or a dinner time meal. They are also great for cookouts and parties as well.
Dip them in some extra marinara sauce and you have yourself one tasty sandwich that will be hard to pass up. When we whip these up there are never any leftovers and they are one of our most requested grilled sandwiches of all time.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM):
Green bell peppers
Red bell peppers
Sweet onion
Olive oil
Garlic powder
Onion powder
Dried oregano
Kosher salt
Black pepper
Italian sausages
Marinara sauce
Hoagie rolls (or French Baguette cut into 5 pieces)
Shredded mozzarella cheese
HOW TO MAKE GRILLED ITALIAN SAUSAGE SANDWICHES, STEP BY STEP:
- Preheat the oven to 375 degrees F. Cut the bell peppers into ยฝ inch strips, discarding the stem and seeds and place onto a large baking sheet.
- Remove the skin and root of the onion and slice the onion into ยผ inch rounds or slices. Separate the onion layers into rings. Place them onto the baking sheet with the peppers.
- Over the peppers and onions drizzle the olive oil, then add the garlic powder, onion powder, oregano, salt, and pepper.
- Toss everything together with your hands or tongs , making sure everything is coated evenly.
- Place the baking sheet into the oven and bake for 40-45 minutes tossing around with a spatula every 15 minutes until the vegetables are tender and slightly browned. Set aside.
- Lower the oven temperature to 350 degrees F.
- Over medium heat, grill the sausages until they are cooked through and seared on the outside, this will take about 15 minutes, or until an internal temperature reaches 165ยฐF. Remove them onto a plate until you are ready to assemble the sandwiches.
- In the microwave or in a saucepan on the stovetop, warm the marinara sauce.
- To assemble sandwiches, place the sausages into the hoagie rolls, top with some marinara (to your liking).Then add the peppers and onions onto each sandwich. Lastly top the sandwiches with about 2 tablespoons of mozzarella cheese.
- Bake the sandwiches for 10-15 minutes until the cheese is melted and the bread is slightly crispy. Serve immediately with more marinara sauce for dipping if desired.
WHAT KIND OF ROLLS SHOULD I USE?
You can use any of your favorite hoagie rolls. For this recipe we take a French Baguette and cut it down into 5 equal pieces. This is not necessary we just like the crispness of the bread.
DOES THIS MAKE A LOT OF VEGETABLES?
Yes it does, we like to have extra vegetables to everyone can put as many on their sandwiches as they desire. We also like to serve them alongside the sandwich.
If you do not want to have extra vegetables for this recipe, then cut the recipe for the roasted vegetables in half – then you will have just enough for each sandwich.
WHAT IS THE BEST CHEESE?
We opt for a mozzarella for this recipe, we also use shredded. You can use the rounds and just cut or tear them and lay them on top of the sandwich as well.
Other cheese that would work good is pepper jack or provolone, they also both give really great flavor. The pepper jack especially if you want to give these sandwiches a little kick.
WHEN DO I KNOW THE SAUSAGES ARE DONE?
You’ll want to get a nice char on the outside of the sausages over the grill, but to make sure that they are done you can check the internal temperature and once it reaches 165 degrees F they are done.
HOW TO STORE:
To store these Italian Sausage Sandwiches, wrap in plastic wrap or foil and place in an airtight container in the refrigerator where they will keep for up to 3 days.
To reheat, remove from the refrigerator and place on a microwave safe plate and microwave until heated through. You can also place these back in the oven wrapped in foil until heated through.
We do not recommend freezing this recipe.
