A cheesy and spicy appetizer these delicious Copycat Texas Roadhouse Rattlesnake Bites are the perfect appetizer to any meal!
If you haven’t already figured out from many many many of my previous posts, I love appetizers. I could sustain myself off of appetizers all day long. A platter of just appetizers for supper? Sign me up. Yeah I know it sounds a little over board but I adore lots of “small portion” plates…combined together on one slightly larger plate to make a meal.
When we were in Denver a few weeks ago, for my birthday I choose to go to Texas Roadhouse. I haven’t been in a few years, it was near the hotel and I just felt like “bar” food. While I already adore their amazing rolls and cinnamon honey butter, we tried something new for one.
New meant these delicious Rattlesnake Bites. They aren’t what the name implies. They are delicious cheese and jalapeno filled balls that are battered and deep-fried until golden and melty. Well melty is my middle name. I’m addicted to cheese so these were a no brainer.
They came to our table and we tried them for the first time and immediately I wanted to order another plate to bring back to the hotel with us for later. unfortunately I didn’t ๐ But I knew that this was the first thing that I NEEDED to make when I got back to Minnesota.
And that is just what we did. The next day we ran to the store and I made sure that I had all the ingredients that I needed to recreate these delicious, cheesy handheld treats.
Now this is kind of a cross between jalapeno poppers and mozzarella sticks. Which both I absolutely adore…so obviously you already know what I think about these! Trust me, you need to try them!!
Copycat Texas Roadhouse Rattlesnake Bites
Ingredients
- 2 8 oz blocks Pepper Jack cheese, shredded
- 2-3 jalapenos diced (depending on how hot you like them)
- 1/2 cup flour
- 1 egg
- 1 cup milk
- 1 1/2 cup bread crumbs
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp garlic powder
- Oil for frying
Instructions
- n bowl combine your shredded cheese and jalapenos.
- Shape cheese mixture into about 1 1/2" balls, squeezing tightly to compress.
- Place on cookie sheet and freeze for about 30 minutes.
- Meanwhile preheat your deep fryer to 350.
- Once chilled, in bowl add your flour.
- In another bowl mix together your egg and milk.
- Lastly in bowl stir together your bread crumbs and seasonings.
- Start by rolling your balls into the flour mixture, then dipping into milk and lastly coating with bread crumbs.
- Fry in batches for about 3-4 minutes or until golden brown.
- Drain on paper towel.
- Serve with your favorite dipping sauces.

I personally haven’t tried it but I don’t see why you shouldn’t be able to since you can pretty much air fry anything that you deep fry! They might not get as golden though, thats my only concern.

I added cream cheese to help keep the balls in ball shape and stick the ingredients together. Tastes delicious!

Hi I would like to make these while we are at the lake but with limited space in the freezer in our RV I’m wondering if I can pre make the balls of cheese and peppers and just freeze them then put them in a Ziploc bag then once at the lake dip them in the batter and fry or would this not work with them being completely frozen thanks for any response

That should work! I would just let them sit out to defrost a bit before battering and deep frying so the cheese all melts evenly.

Once your balls are assembled you roll them into the flour first, then dip into the milk then into the bread crumbs.

I would say they could probably stay maybe a month in a sealed package. I haven’t tried but I don’t see how they would be any different then any other prepackaged items.

Hi Nichole, Sorry I’m just getting around to responding. I have never tried baking these but you can. I would do all the directions the same but place on a parchment lined baking sheet and bake at 350 for about 30ish minutes, don’t quote me, it’s just an estimate. I would check the oven every so often for the melted cheese and see if they look done.

Julie, OMG girl these are so good. I had these for the first time this summer when we went to Denver and I had to ask the server what was all in them so I could recreate them and that’s the first thing I did when I got home!!

I just checked this recipe and a few others on mobile and on desktop to see if there is a problem and I only had to click on 1 read more button and no extra pages so I’m not sure what is going on on your end or what the issue may be. I’m sorry you’re not getting to the recipe, there is no extra clicks on any of my recipes other then to expand them to read more. Unless you found my recipe through another website that isn’t my own, which would possibly be from The Best Blog Recipes where they feature recipes then with them there would be more clicks because they have to direct you to my site.

I bought already shredded montery jack cheese and warmed it for 45 seconds added my jalepenos then formed my balls…it was much easier…they are fantastic!

I’d love to make these, but is there something I could substitute for the jalapenos to take the heat out for the younger crowd and those who don’t eat the spicier/hotter ingriedients and still be tasty?

Hi Ruby, if you still want to keep some heat but less of it, diced green peppers don’t pack that much heat and would work well in these as well. You could completely omit any pepper, but then it would more or less be a cheese curd (which are amazing).

Hi Tiffany! I love eating my Rattlesnake Bites with ranch, but I know at TR they serve it with a spicy horseradish sauce.

I made these and they came out great… Only thing I would suggest is saute the jalapeรฑos first to soften them and make them the size of a walnut not a golf ball
