With graham crackers, chocolate cream, whipped cream and more chocolate – this Chocolate Icebox Cake is sweet, satisfying and easy!
I absolutely love a no-bake dessert, when I don’t have to turn on the oven I’m happy. Especially now that it is getting warmer outside.
This Chocolate Icebox Cake is one of our families favorite warm weather desserts, its also great to bring along for gatherings.
The layers are so amazing together, with the graham crackers getting slightly soft. Which in my opinion just makes everything so much better.
Then you add the mini chocolate chips and chocolate fudge sauce over the top and you have yourself the ultimate chocolate dessert.
I would not say that this is super chocolatey, as we add cream cheese, powdered sugar and whipped cream into the chocolate – so it balances out well.
But if you are looking a delish chocolate dessert that doesn’t take much effort, then you need this Chocolate Icebox Cake.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Cream cheese
Powdered sugar
Cocoa powder
Vanilla extract
Whipped cream
Graham crackers
Chocolate fudge sauce, optional
Mini chocolate chips, optional
HOW TO MAKE CHOCOLATE ICEBOX CAKE, STEP BY STEP:
- In a large bowl, beat the cream cheese, powdered sugar, cocoa powder, and vanilla extract until smooth.
- Fold 2/3rds of the whipped cream into cream cheese mixture until just combined, set aside the remaining 1/3rd.
- Spread a very thin layer of the chocolate cream mixture into the bottom of an 8×8-in baking dish.
- Place a layer of graham crackers across the top of the cream layer, some may need to be split in half to fit.
- Spread half of the remaining chocolate cream mixture over the top of the graham cracker layer.
- Repeat the layering process until you have 3 full layers of graham crackers.
- Spread the remaining whipped cream across the top of the cake.
- Cover and refrigerate the baking dish for 4-6 hours or overnight for the graham crackers to soften.
- Garnish with fudge and mini chocolate chips/ Slice and serve. Enjoy!
WHAT DOES THIS ICEBOX CAKE TASTE LIKE?
With the way that the filling is made, it tastes like a creamy cheesecake filling that you just want to eat with a spoon.
Then add in the graham crackers (more cheesecake flavor) all topped with whipped cream and more chocolate.
HOW LONG DOES THIS NEED TO CHILL?
You will want this to chill for at least 4-6 hours to overnight. You want time for the layers to set up.
This also makes it a great make ahead dessert that you can bring to gatherings, parties and BBQ’s.
CAN THIS ICEBOX CAKE BE DOUBLED?
Absolutely, if you want to double this you will want to make it in a 9×13-in baking dish.
Double all the ingredients – the graham crackers can vary so just make sure that you do have double the amount that this recipe calls for.
The chilling time will remain the same, you’ll just have more to enjoy or share!
WHAT CAN I USE OTHER THAN GRAHAM CRACKERS?
While graham crackers are usually what is used in an Icebox Cake, you can switch it up and have some more fun. Some ideas include:
- Sugar Cookies
- Shortbread Cookies
- Chocolate Chip Cookies
- Chocolate Graham Crackers
- Ladyfingers
These are just some ideas to switch it up, I highly recommend the graham crackers for the best outcome!
HOW TO STORE:
This can be stored in the refrigerator in an airtight container where it will keep for up to 3-4 days.
You can also freeze this recipe, place in a freezer safe container and it will keep in the freezer for up to 3 months.
To defrost, remove to the refrigerator overnight or until thawed.
