Starting with a boxed cake mix, these Cherry Coke Cupcakes are a delicious mashup of chocolate and cherry goodness in hand held form. The perfect dessert for young and old!
I love cupcakes, who doesn’t love their own cake, but in smaller form? These Cherry Coke Cupcakes are full of flavor of both chocolate and cherry which blends so well together.
Doctoring up a boxed cake mix, this is an easy dessert that you can throw together in no time, and they also make a nice large batch so they are great for gatherings or parties.
Cherry Coke is one of mine and my family’s favorite drinks, so why not turn it into dessert form? With Coke, chocolate and cherry all mixed together, its like your drinking the soda with all the tasty flavors.
The cherry flavored frosting really gives it a nice punch of that cherry flavor, along with a cherry in the center of the cupcake as well. Just a delightful and tasty dessert all around.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM):
Maraschino cherries
Devilโs Food cake mix
Coca Cola
Vegetable oil
Eggs
Butter
Powdered sugar
Cherry juice (from cherries)
Chocolate shavings, optional
HOW TO MAKE CHERRY COKE CUPCAKES, STEP BY STEP:
- Preheat the oven to 350 degrees F. Line two standard cupcake/muffin pans with paper liners, set aside.
- In a large bowl, add the cake mix, cola, ยผ cup reserved cherry juice, oil, and eggs.
- Whisk mixture together until just combined.
- Fill liners 2/3 full and place 1 stemless maraschino cherry to the middle of each well.
- Bake for 20-22 minutes, or until a toothpick inserted in the center of one cupcake comes out clean. Let cool in pan for about 5 minutes then move to a wire rack to cool completely.
- To make the frosting, In the bowl of a stand mixer fitted with the paddle attachment, beat the butter until smooth, then add the powdered sugar and mix on low. Add the remaining reserved cherry juice slowly, until the frosting is light and fluffy.
- Transfer frosting to a piping bag fitted with your favorite attachment and frost each cupcake.
- Sprinkle each cupcake with chocolate shavings, and top with a stemmed maraschino cherry.
DO I HAVE TO USE DEVIL’S FOOD CAKE MIX?
No you do not, we just love the flavor of the Devil’s Food, but you can use any chocolate cake mix that you like. You can also make your own homemade cupcakes as well, swapping the milk/water for the coke and cherry juice.
CAN I USE ANOTHER SODA?
Yes, if you do not want to use Coke in this recipe another cola flavored soda will work as well.
WHAT CAN I GARNISH THESE CUPCAKES WITH?
We like to do chocolate shavings and a stemmed cherry, but you do not have to. You can leave them plain, drizzle with some chocolate syrup, top with some chocolate sprinkles, etc.
Do what you feel you like to top these cupcakes.
HOW TO STORE:
These Cherry Coke Cupcakes can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
They can also be frozen, we prefer to freeze the cupcakes unfrosted. The best way to freeze is to store in a freezer container where they will keep for up to 2 months.
To defrost, remove from the freezer until thawed and then frost.
TIPS AND TRICKS:
- Make sure your eggs are at room temperature, they help the cupcakes become more fluffy.
- You can use another flavored cola in this recipe.
- You can make your own homemade cake mix if you need, see above for tips.
- Use your favorite boxed chocolate cake mix.
- These can be frozen, see above on how to do that.
- Garnish with anything you like. Chocolate syrup, chocolate sprinkles, chocolate shavings, cherries, etc.
- Make sure that you are using stemless cherries in the center of the cupcakes.
