Who doesn’t love cookies? I mean cookies are an essential dessert that has always been a comfort classic and that mostly every person in this world enjoys.
I will be honest, it took me a long while to really enjoy cookies. Like I’ve stated in the past, my mom used to make chocolate chip cookies, but they were always crispy and I hated crispy cookies so it turned me off to them all together for a long time.
Then I met my husband, the certified cookaholic. That guy can put back a package of cookies a night if he wanted to. Don’t we all wish we could do that, I mean that guy is really living the dream.
There isn’t a cookie I cant put in front of him that he won’t devour. But in all honesty, he adores the golden Oreos the best, not homemade, but I guess I cant judge him.
So when we started making thumbprint cookies, he fell in love all over again with a cookie he never tried until I had made it for him.
Now we did grow up with so many various thumbprint cookies, but these Caramel Chocolate Thumbprint Cookies have always been my go-to favorites.
WHAT INGREDIENTS DO YOU NEED?
- Flour
- Cocoa powder
- Salt
- Butter
- Sugar
- Egg
- Milk
- Vanila
- Pecans
- Caramels
- Heavy cream
- Candy melts or candiquick
This Thumbprint Cookie Recipe is one of those recipes that people quickly become addicted to. I am not even slightly fibbing there. They pretty much remind me of turtles.
You have the chocolate, pecans and caramel that come together so nicely. I mean that little puddle of caramel in the center of each cookie and the extra drizzle of chocolate over each one is where its at baby!

The cookie itself is soft and not too crumbly, its coated in a layer of pecans that gives it a little bit of crunch and then has this nice pool of gooey caramel that gives it just a little more depth then top it off with that chocolate…oh man.
HOW DO YOU MAKE CHOCOLATE THUMBPRINT COOKIES?
- In bowl whisk together flour, cocoa powder and salt, set aside.
- In stand mixer of with hand mixer beat together butter and sugar.
- Add in egg yolk, vanilla and milk and beat until combined.
- Add in your dry ingredients and mix until blended.
- Cover and refrigerate for 1 hour.
- Preheat your oven to 350 degrees.
- Line a baking sheet with parchment paper and set aside.
- Add your chopped pecans to a bowl and set aside.
- In another bowl whisk your egg white until frothy.
- Grab your dough and roll into 1-1 1/2″ balls, coat in egg white then tip in pecans coating each side.
- Place dough on prepared baking sheet and using a 1/2 tsp indent the centers.
- Bake for 10-12 minutes, remove from oven and if needed using your 1/2 tsp and indent again.
- Set aside to cool.
- In microwave safe bowl melt together your caramel and cream and stir until smooth, spoon into cookies and let cool again.
- Lastly melt your chocolate candy melts or candiquik place in a small bag and cut the tip off so its small and drizzle over cookies, let harden before serving.
I cant even begin to tell you that the flavor combination in these thumbprint cookies are beyond amazing. This is one recipe that you’ll want to put on your baking list this year.

I made these tonight to add to a cookie tray for a family get together tomorrow. I had to hide them so my family (aka husband) wouldn’t eat them all! They are so good! I ran out of egg white on my last few, but the nuts stuck fine anyway with no issue. This recipe is def a keeper!

I made these but just made the basic dough baked them and put a ROLO in each one and when melted put nut on top. Was in a hurry so improvised. Makes a delicious cookie!!!

These look great…could someone please comment on the part about rolling them in the nuts? It says “coating both sides”…so does the entire dough ball get rolled in nuts? Thanks! Looking forward to making them.
