I DON’T HAVE BUTTERMILK, WHAT CAN I DO?
Making buttermilk at home is easy! We do it all the time when don’t have any on hand. What you will want to do with this specific recipe is add vinegar or lemon juice to regular milk.
You will want to add 1 tablespoon + 1 teaspoon of the vinegar or lemon juice to the milk and stir it in. Let it sit for 5-10 minutes and then stir again and add to the recipe.
WHY ARE MY BUTTERMILK PANCAKES FLAT?
There are two reasons that this can happen, one is that the batter is too wet. You do not want a runny batter it will be thicker and should gently drip off a spoon rather than fall off, also you are wanting the lumps in there.
The second reason is that your baking powder is bad, this is what helps your Buttermilk Pancake Recipe rice and be fluffy, so if your batter is thicker but they are still flat, try new baking powder.
WHAT CAN I TOP THESE WITH?
We are fans of the normal toppings, butter and syrup. But you can also top these with fruit, other flavored syrups, peanut butter and so much more.
There are so many different things that people top their pancakes with so use what you like, or experiment!
HOW TO STORE:
Place your pancakes in an airtight container in the refrigerator where they should keep for up to 4-5 days.
These can also be frozen, let your pancakes cool fully and then place in a freezer container or bag separated by parchment paper and store in the freezer where they will keep for up to 2 months.
Let defrost in the refrigerator overnight and rewarm in the microwave.

Great tasting pancakes – highly recommended. Half recipe made 10 4″ pancakes. I added more buttermilk because the batter was a little thick.
