I mean nachos for breakfast, who would have thought? Trust me though, they are loved by the whole family and super easy to throw together.
We make these all the time. As my kids are older they have gotten different tastes and nachos for breakfast are one of their favorite things ever.
With various topping choices, you can really make these your own. I will give you the base recipe that we use and you can choose all the toppings that you want to put on them.
But with bacon, eggs, beans and cheese, you really can’t go wrong with all those ingredients.

WHY THIS RECIPE WORKS:
- Super simple recipe with easy to find ingredients.
- You can add so many different toppings to make it your own.
- This makes a large batch but you can always double it to serve more people.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Tortilla chips
Cheddar cheese
Black or pinto beans
Bacon
Eggs
Milk
Salt
Ground pepper
Optional toppings
HOW TO MAKE BREAKFAST NACHOS, STEP BY STEP:
- Preheat the oven to a low broil and line a rimmed baking sheet with foil. Spray the foil with cooking spray lightly.
- Layer the tortilla chips in a single layer on the baking sheet. Sprinkle ⅔ of the cheese over the chips followed by the beans, and crumbled bacon.
- In a medium mixing bowl crack the eggs and add the milk, salt, and pepper. Whisk together until combined.
- Heat a non-stick skillet over medium heat and add the eggs. Scramble the eggs until almost cooked. You don’t want them dry because they will cook a bit more in the oven. Remove from heat and sprinkle over the chips.
- Sprinkle the remaining cheese and broil about 2-3 minutes until the cheese is melted. Do not leave the baking sheet in the oven without your eye on it.
- Pull out of the oven when the cheese is melted and top with your desired toppings and serve hot.
WHAT TOPPINGS CAN I ADD TO THESE BREAKFAST NACHOS?
This is where it can get fun, you can really add anything that you love, some of my favorite ideas include:
- Sour cream
- Pico
- Sliced avocados
- Diced red onion
- Hot sauce
- Guacamole
- Jalapeno slices
- Sliced green onions
Really whatever you want to add to these you can. Just make it how you think it will taste best for you.
WHAT IS THE BEST CHEESE TO USE?
Cheddar cheese is our go-to for this recipe. The only thing is that you do not want to use pre-packaged cheese.
Shredding your own cheese is best as it melts better and you have the best outcome with that. You can use pre-packaged cheese if it’s all you have.
IS THERE OTHER MEATS THAT I CAN USE?
If you don’t want to use the bacon, or if you want to add to the bacon you can also use pre-cooked ham or cooked sausage as well.
All of these work well with the flavors so use all of them or pick and choose what you want.
CAN I DOUBLE THIS RECIPE?
Yes, if you are wanting to serve more people (this serves around 6) then you can absolutely double this.
Just get another sheet pan out and do exactly the same thing!
HOW TO STORE:
We do not recommend storing this recipe, this is best when it is first made.
TIPS AND TRICKS:
- A bunch of different toppings can be used, see above for ideas.
- Pre shredded cheese doesn’t melt as nice and freshly shredded and because this dish is all about the nicely melted cheese, I highly recommend freshly shredded cheese.
- This does not store well.
- You can swap out the bacon for diced ham or crumbled sausage, if desired, or leave it out for a vegetarian friendly breakfast.
- You can have all the toppings and condiments on the side and let people dish up their own so they can choose what goes on their nachos instead of topping the whole sheet.
- Easily make a double batch of this recipe.
