Breakfast Nachos

An easy and fun breakfast recipe, these Breakfast Nachos are fun, family friendly and super easy to make. One recipe you will want to keep around for the long haul.

Ingredients

  • 10-13 oz bag tortilla chips
  • 3 cups cheddar cheese freshly shredded, divided
  • 15- oz can black or pinto beans drained and rinsed
  • ½ pound cooked and crumbled bacon
  • 5 large eggs
  • 2 Tablespoons milk
  • ¼ teaspoon salt
  • 1/8 teaspoon coarse ground pepper

Optional sides and garnishes:

  • Sour cream
  • Pico
  • Sliced avocados
  • Diced red onion
  • Hot sauce
  • Guacamole
  • Jalapeno slices
  • Sliced green onions

Instructions

  • Preheat the oven to a low broil and line a rimmed baking sheet with foil. Spray the foil with cooking spray lightly.
  • Layer the tortilla chips in a single layer on the baking sheet. Sprinkle ⅔ of the cheese over the chips followed by the beans, and crumbled bacon.
  • In a medium mixing bowl crack the eggs and add the milk, salt, and pepper. Whisk together until combined.
  • Heat a non-stick skillet over medium heat and add the eggs. Scramble the eggs until almost cooked. You don’t want them dry because they will cook a bit more in the oven. Remove from heat and sprinkle over the chips.
  • Sprinkle the remaining cheese and broil about 2-3 minutes until the cheese is melted. Do not leave the baking sheet in the oven without your eye on it.
  • Pull out of the oven when the cheese is melted and top with your desired toppings and serve hot.

Notes

  1. The optional toppings and garnishes are not included in the nutritional value.
  2. A bunch of different toppings can be used, see above for ideas.
  3. Pre shredded cheese doesn’t melt as nice and freshly shredded and because this dish is all about the nicely melted cheese, I highly recommend freshly shredded cheese. 
  4. This does not store well.
  5. You can swap out the bacon for diced ham or crumbled sausage, if desired, or leave it out for a vegetarian friendly breakfast. 
  6. You can have all the toppings and condiments on the side and let people dish up their own so they can choose what goes on their nachos instead of topping the whole sheet. 
  7. Easily make a double batch of this recipe.
