I can’t believe that we only have about one month left of summer vacation here in MN. We usually start school back up right after labor day, which is still later than some!! Although I love having my kids around 24/7 I’m excited for school to start back up and the kids get into a more normal routine.
Around here when back to school comes we look for fun and quick meals that suit everyone and can be eaten quickly since we have so many activities that we almost lose ourselves in the day-to-day motions that we call life.
We get bored real quick with our normal cereal and toast routine that we like to come up with some creative new recipes for breakfast! That is one meal we all can’t live without.
Technically we love breakfast for all meals so these Breakfast Egg Rolls can pretty much be a free for all when it comes to when you want to devour them. Morning, noon or night these are a delicious option for a quick and easy back to school meal!
My whole brood absolutely loved these Breakfast Egg Rolls. Filled full with bacon, sausage, eggs cheese and to give it a little genuine southwest flavor we added some Pace Thick and Chunky Salsa!
I don’t know about you but salsa is one thing I love to eat with my breakfast food. Egg bakes never go without, and these puppies are great having it inside with the cheesy goodness and along side where it’s easily dippable. Because dipability is important you know!
If you’ve never made egg rolls before, they are a pretty simple set up. It actually shows you on the package how to roll them! You can stuff them with your favorite fillings – here is my Bacon Cheeseburger Egg Rolls for example, roll up and bake or deep fry.
When I was at Walmart getting my ingredients for these Breakfast Egg Rolls I also picked up some V8+ Energy along with my Pace Thick and Chunky Salsa! Being a mom of 4 and seeing this hidden gem among the aisles I knew I couldn’t pass it up!
I mean it has energy from green tea, it tastes like real fruit and it provides a combined serving of fruits and veggies with only 50 calories. Score! They have a bunch of different flavors like Pomegranate Blueberry, Peach Mango and Orange Pineapple. I’ve always been keen on Black Cherry so I HAD to get that flavor!

Breakfast Egg Rolls
Ingredients
- Egg roll wrappers
- 1/2 lb breakfast sausage cooked
- 2 strips bacon cooked and crumbled
- 3 eggs scrambled
- 1/2 cup cheese
- Pace Thick and Chunky Salsa
- Water
Instructions
- Preheat deep fryer to 375.
- Add about 2 Tbs water to a small dish, set aside.
- In egg roll wrapper add your about 2-3 Tbs of ground sausage, top with 2-3 Tbs of eggs.
- Sprinkle on about 1 Tbs bacon, 1-2 Tbs cheese.
- Finish by spreading desired amount of salsa over your cheese - depending on how hot you want it.
- Roll up egg roll style before sealing using your water spread a little bit on edges and corner and roll tightly and press down.
- Repeat with each of your egg roll wrappers.
- Fry for about 2-3 minutes of until golden, remove to paper towel to drain.
- Serve with extra salsa for dipping.

Can these Breakfast Eggrolls be frozen and then microwave to reheat?
They look so delicious and would be so awesome to ‘grab and go’!!!

You absolutely can freeze these, I would wrap individually after cooled in tin foil then place in ziploc bag. To reheat I suggest using the oven at 350 for 18-20 minutes just to keep the crispness, but you can use the microwave and heat for about 1 minute or so, but they will be more soggy is all. Hope that helps!
