WHY THIS RECIPE WORKS:
- Minimal ingredients make this whip up quickly.
- The flavors play so well together.
- It makes 3 healthy servings and can be served with a variety of things.
HOW TO MAKE BAKED CAPRESE CHICKEN, STEP BY STEP:
- Pound out chicken to even thickness and season both sides of the chicken breasts liberally with salt and pepper as well as the dried oregano and basil.
- Heat the olive oil in a pan over medium heat. Once hot, add the sliced garlic. Saute the garlic until it is just fragrant then add the chicken breasts to the pan. Sear the chicken for about 3 minutes on each side so each side is nicely browned.
- Place two slices of mozzarella on each chicken breast and place the pan in the oven and bake at 375 degrees F for 25-20 minutes or until internal temp is 165 degrees F.
- While the chicken is cooking, heat the balsamic vinegar in a small saucepan over medium-low heat. Stir occasionally and continue gently heating until the vinegar reaches your desired thickness. If you want the final result to be a bit more sweet, you can add a small amount of honey or brown sugar as itโs reducing.
- Remove chicken from oven and place two slices of tomato on top of each chicken breast and some more seasoning if desired.
- Drizzle the balsamic reduction on top. Garnish with more dried oregano and fresh basil and serve!
This Caprese Chicken Recipe can sound like a daunting task but in reality it really isn’t. Sometimes the harder they look the easier they are and this is one of those recipes.
One that we as a family collective absolutely love and adore and especially in the summertime when we can get fresh tomatoes and basil from the garden.
HOW TO STORE:
This Baked Caprese Chicken is best served right out of the oven. You can reheat it in the oven if you have leftovers, but the chicken will need to be stored in the refrigerator in an airtight container.
If you do reheat the tomatoes will become a little more soggy, but they won’t be too bad, you can reheat at the lowest temperature to make sure that doesn’t happen until the chicken is warmed through.
A lot of the times we like to cut this up and serve it in salads, we really like this Caprese Tortellini Salad that we make as well.
Some other good things to serve alongside this recipe include:
There is so much more that you can serve with this Caprese Chicken, it’s more or less what you like with the flavors that the chicken put’s off itself.
This recipe can easily be doubled if you have a larger family, but it really does create larger portions from each breast, so it may not be necessary.
