Delicious with a spicy kick this Slow Cooker Barbacoa Beef is a family favorite and it saves time being cooked in the crockpot!
Hey guys, another Monday is finally here. Did you all see the eclipse last night? Not here in Minnesota, seems like when the cool stuff happens Mother Nature want’s to play games. So needless to say it was cloudy and barely a peek of the moon was seen. Luckily they had a live feed online that I was able to view otherwise I would have to wait another few years until this whole ordeal happened again, and who want to wait!
Speaking of not wanting to wait…how about running to your local grocery store and buying all the ingredients needed to make this amazing Barbacoa beef? No seriously, go, run, now! If you guys have never tried this stuff before you are sorely missing out! This beef is so tender and flavorful that you’ll feel like you just had a Mexican fiesta right in your mouth! This this is so full of spices that you wont even know what to do with yourself.
You all know it’s my fashion to cook in my crock pot so how could I not make this in there? Seriously. The smell that was coming out of that thing was drunkening! Oh and have you guys seen those crock pot liners? Best invention ever! I don’t know why I never used them before. I don’t think that I will cook in that bad boy without those life savers again! Such easy clean up. My 8-year-old even told me they were cool! Score!
So now that it’s fall why not dust off that crock pot (if you haven’t been using it all summer like me.) And go make yourself a big old pot of this delicious beef. There is so much that you can make with it. Obviously from my pictures you see that we made tacos.
The next night (yes I love leftovers) I made hash! Tossed the beef with some O’Brien potatoes, fried it up together then topped with cheese, sour cream and pico de gallo and we had ourselves a whole new meal! Other variations could be taquitos, enchiladas or even tamales! So do with this beef what your heart desires, but make it!
- 2-4 lb chuck roast fat trimmed and cut into chunks
- 4 tsp minced garlic
- 1/3 cup apple cider vinegar
- 1 Tbs ground cumin
- 1 Tbs ground oregano
- 1 tsp salt
- 1 tsp black pepper
- 1/4 tsp nutmeg
- 1-2 Tbs brown sugar
- Juice of 1 lime
- 2-3 chipotle peppers in adobo sauce chopped
- 1 4 oz can chopped green chiles
- 2 bay leaves
- 1 small onion chopped
- 1/2 cup beef or water
In crock pot add your chopped beef.
In bowl combine remaining ingredients and stir.
Pour over beef and toss to coat.
Cook on low for 6-8 hours or high for 3-4.
Once cooked, take a fork and shred your beef.
Serve on tortillas as tacos or use for other dishes!
