This popular meat and cheese packed TikTok Grinder Sandwich is a must with the tomato, lettuce, and spices, all ready to go in a half hour!
This TikTok Grinder Sandwich has been all the rage for a bit and once I made it I knew I had to share it with you guys. It is too good to NOT share.
As you can imagine, this packs a flavor punch and is on the salty side which is to be expected with all the layering. But, it is not overwhelming at all, the flavors blend very well together.
This is a really is a tasty sandwich and I love that the shredded lettuce gets to soak in the vinegar, spices, and everything else as it helps it release those flavors into the meats, cheeses, and all the other goodness piled in the sub.
It’s a new family favorite recipe that’ll be in our rotation for a while, for sure! We have made it more times than I can count since we first tried it when we saw it on social media.
It is super hearty and can feed the whole family, and the whole family will absolutely love this. It is also great for parties, you just cannot go wrong with this TikTok Grinder Sandwich.

INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM)
Italian loaf of bread
Provolone cheese
Boiled ham
Sopressata
Genoa salami
Deli pepperoni
Mayonnaise
Red wine vinegar
Garlic
Pepper
Dried oregano
Red chili flakes
Kosher salt
Pepperoncini
Red onion
Iceberg lettuce
Parmigiano-Reggiano cheese
Beefsteak tomato
Olive oil
HOW TO MAKE A TIKTOK GRINDER SANDWICH, STEP BY STEP:
- Preheat the oven to 350ยฐF and cut the bread in half and place it on a sheet tray cut side up. Then, remove most of the inside of the bread leaving about ยฝ inch of the bread. Add half of the provolone to each side and place in the oven until melted, or for about 5 minutes.
- Remove from oven and layer the ham over one half of the sub, and layer the soppressata on the other side.
- Top the ham with the salami and the soppressata with the pepperoni.
- Place the sandwich back in the oven to heat the meats through and toast the bread for 5 minutes.
- While the sandwich is baking, make the grinder salad. Whisk the mayonnaise, vinegar, garlic, pepper, oregano, chili flakes, and salt together until combined.
- Add the pepperoncini and red onion to the mix, and stir around in the dressing until coated.
- Add the lettuce to the mixture, and use tongs to toss it in the dressing to coat and set it aside.
- Sprinkle the sub with ยผ of the parmesan cheese.
- Next, add tomato slices.
- Drizzle the tomatoes with olive oil and add salt and pepper to taste.
- Add some of the grinder salad to the sandwich. Top with the remaining parmesan cheese.
- Add the top half of the sandwich over the bottom half. Gently press down.
- Cut into wedges and serve with more of the grinder salad on the side with chips for dipping, if desired.

It’s kinda reminds me of a cold cut sub but heated up with a few extra ingredients on it.
WHAT OTHER CHEESE CAN I USE?
Don’t have those cheese options, or want to try other ones? Here are a few that would work: Mozzarella, Swiss, Fontina, Muenster, and Gruyere.
These aren’t your only options though, if you have other ideas, give them a try! Just go with what you like best or what you have on hand.
WHAT OTHER MEAT CAN I USE?
Want some more options to choose from? Try these other Italian meat suggestions: prosciutto, mortadella, capcolla, and tavern ham. All taste really great when we have switched the recipe up.
HOW TO STORE:
Leftovers keep well in the refrigerator if tightly wrapped with plastic wrap, for 2 days. The lettuce will get soggy but it is still enjoyable.
You can eat the leftover sandwiches cold and they’d still be amazing. Reheating doesn’t work too well once you’ve added the salad portion.
I don’t recommend trying to freeze this.
TIPS AND TRICKS:
- Feel free to switch out meats and cheeses to your liking, some great suggestions are shared above. I do recommend thinly slicing the meat and layering it in a โfluffyโ way as described in the video, it is more enjoyable to eat that way instead of just layers of meat packed on each other.
- I always use fresh-cut Boarโs Head meat and cheese for my sandwiches and anything calling for deli meat but use whatever you like.
- The rest of the recipe that is not the salad is a basic way to build an Italian sub for a crowd. We love to go all out with our party subs and use a lot of meat and different varieties. If you donโt want as much meat, then use half from the recipe.
- If you want more bread, you don’t have to remove as much in the beginning, it just makes it easier to pile everything in without feeling like it’s too hard to take a bite.
- I love using a crusty large Italian bread topped with sesame seeds for an extra layer of flavor, again use whatever bread you like. Focaccia or plain Italian bread works too.
- The grinder salad is definitely the star of this sub. If you donโt like pepperoncini you can sub with banana peppers or another pickled vegetable, this is what really gives a pop to the salad.
- The salad portion can also be used as a dip or salad on its own.
- You can also sub a sweet onion for the red onion.
- I don’t recommend freezing this but you can refrigerate the leftovers.

Ingredients
For the sandwich:
- 16 ounce Italian loaf of bread
