A fun, tasty and easy dish – this Thai Pineapple Fried Rice has so many flavors that you will not be able to resist.
I’m a huge Fried Rice fan, I’ll try any kind and I really haven’t come across any that I have not liked.
This Thai Pineapple Fried Rice is a family favorite because of the sweet and savory that goes into it.
Also, it is a super easy recipe to make for a weeknight dinner. It literally only takes 20 minutes and you can always double the recipe to serve more people.
With the addition of peanuts, it has a nice crunch to each and every single bite, so not only are the flavors diverse so is the texture.
This recipe is great all year long, but in the spring and summer months is when we absolutely love making it the most.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Cooking oil
Garlic
Red bell pepper
Frozen peas
Pineapple
Peanuts (plus more for garnish, optional)
Brown rice
Sunbird fried rice mix
Soy sauce
Sriracha
Green onion, optional garnish
Cilantro, optional garnish
HOW TO MAKE THAI PINEAPPLE FRIED RICE, STEP BY STEP:
- In a large frying pan or wok turn the heat to medium high and heat the cooking oil.
- Add in the minced garlic and bell pepper carefully and cook, stirring frequently, until softened.
- Add in the frozen peas and pineapple and cook through until soft and pineapple is starting to caramelize, about 3-5 minutes.
- Push the vegetables to the side and add in the chopped peanuts.
- Cook the peanuts, stirring constantly, until they have toasted slight, about 2 minutes. If needed add another Tablespoon of cooking oil here.
- Push the peanuts to the side with the vegetables and add in the brown rice.
- Cook the rice for about 2-3 minutes and stir often until the rice begins to fry.
- Mix everything together and add in your fried rice mix, soy sauce and sriracha and then mix together well.
- Serve immediately with optional garnishes.
CAN I ADD ANY MEAT TO THIS RECIPE?
Yes, if you want to add some additional protein, you can add some meat to this Fried Rice.
Some meats that you can add include: Chicken, Shrimp or Tofu (meatless). Make sure that you cook the meats separately then stirring in to heat back up.
DO I HAVE TO USE BROWN RICE?
No, if you are not a fan of brown rice you can use long-grain white rice or jasmine in its place.
One thing that I do recommend is using either rice, use cold or even leftover, this has a tendency to not clump and stir fry better.
CAN I USE ANOTHER TYPE OF NUT?
Yes, we like to use peanuts as that is what we really like best, but other recipes that I’ve seen use cashews.
So you can swap either out for one another depending on your flavor preference.
CAN I USE CANNED PINEAPPLE?
If you want to save some time, you can use canned pineapple in this Thai Pineapple Fried Rice.
I would drain the pineapple as well as you can before adding it to the pan.
WHAT CAN I SERVE WITH THAI PINEAPPLE FRIED RICE?
While this is great as a main dish or even a side dish, there are so many things that you can serve with it to make a full meal, some of my favorites include:
HOW TO STORE:
This can be stored in an airtight container in the refrigerator where it will keep for up to 3-4 days.
I do not recommend freezing this recipe as it has fruit in it and the texture will change.
To reheat, place in a saute pan and stir around until heated through or place in the microwave until heated through.
TIPS AND TRICKS:
- Brown rice is what we like to use but you can use long-grain white rice or jasmine rice as well.
- Canned pineapple can be used.
- Cashews can be substituted in place of the peanuts.
- We do not recommend freezing this recipe.
- If you want to add a protein you can add cooked shrimp, chicken or tofu.
- Prepping your ingredients beforehand is recommended as this recipe is quick.
- If you are not a fan of spice, you can leave the sriracha out.
- If you want to use your own spice mixture instead of the packet you can use: curry powder, coriander or turmeric.
- You can mix the colors of your bell peppers for a more colorful dish.
