Fried Rice in bowl

We are fans of fast fix meals in this house and this Fried Rice recipe is exactly the one that we run to when it comes down to not knowing what we want to make.

My aunt is from Japan and she had taught me this recipe and I’m the only person in the family that can even come close to recreating it. Now technically people would ask how this is “fried” rice when the recipe isn’t technically fried. But I mean it’s neither here nor there when it comes to that question, it was her method and regardless we are sticking to it being called fried rice.

HOW DO YOU MAKE FRIED RICE?

Below you’ll find a few step by step photos showcasing how we make our fried rice recipe. It is super simple and the process is not hard at all!

  • Start by cooking your rice according to the package directions, we use our rice cooker as it has been a saving grace.
  • Next in a non-stick pan add olive oil and your chopped carrots and onions and cook over medium heat until tender and translucent, remove from pan.
  • In the same pan add your chicken and cook until no longer pink and juices run clear, again remove from pan.
  • Lastly in same pan add your eggs and fry until cooked through.
  • In a large bowl add your cooked rice, vegetables, chicken and eggs and toss to combined.
  • Add salt and pepper to your liking and again give it a good stir.
  • Lastly garnish with some green onions if desired.

CAN OTHER MEATS BE USED?

Absolutely. We actually regularly use Spam in our fried rice. I know, a lot of people would turn up their nose to the fact of spam in the recipe, but it is one that we really enjoy. You can also use pork or just add some other veggies in along with it.

Some other veggies include corn, peas, water chestnuts (probably not a veggie), among others. The sky is the limit in this recipe as it really is a basis as to what you really want to add into it yourself.

SOME TIPS FOR MAKING FRIED RICE:

  • Use only olive oil to cook your meats and veggies. This is something that my aunt taught me and I have never went back.
  • Wash your rice before cooking. This is pretty easy, we usually just place our rice in the basin of our rice cooker and cover with water and give it a toss around with our hands or a spoon and drain it and repeat the process a few times. This helps reduce the starch in the rice.
  • Mix in a little touch of milk with your eggs, this helps them cook up a little more light and fluffy.

I wholeheartedly love this recipe. It is so basic but it is really really good. It’s weird that some of the greatest things in life are the simplest things out there.

Fried rice with chopsticks

I also recommend a rice cooker, it has saved my life so many times and you always have perfect rice each and every time. Whereas when I make it on the stove, it always seems too sticky for my liking.

If you are looking for that perfect recipe for your want to be take out night, this chicken fried rice is just what you have been looking for!
