Breakfast lover? Then you’ll fall in love with this cheesy, meaty and hearty Tater Tot Breakfast Casserole! A delicious morning recipe to fill you up!
When it comes to breakfast, I’m more of the hearty breakfast person. I love anything eggs, cheese and meat and this Tater Tot Breakfast Casserole is FULL of all of that.
With a full pound of sausage and half pound of bacon there is no shortage on meat in this puppy. Add some diced onions, all the cheese and some eggs and you have yourself the makings of the best breakfast or bunch dish around.
WHY THIS RECIPE WORKS:
- Breakfast is known as the most important meal of the day, when you can mix all breakfast categories in one gives you the best of both worlds.
- The eggs and milk give it a nice binding agent that makes this hearty casserole stay together nicely when baked.
- Both meats in the recipe really work nice and give it a nice salty aspect that makes it not really require any additional seasonings in this whole recipe.
We love all things meat and cheese and this recipe really does have it all. Ingredients including tater tots, bacon, sausage, eggs, milk, cheese and a little bit if green onions really sets off those flavor senses.
HOW TO MAKE TATER TOT BREAKFAST CASSEROLE, STEP BY STEP:
In large bowl add your frozen tater tots and your shredded cheese, you can use Colby Monterey Jack or Cheddar, whichever you prefer (Photo 1).
Next in skillet add your pork sausage (breakfast sausage) and diced onions and cook until onions are tender and sausage is cooked through, drain then add to your bowl with your tater tots and cheese (Photos 2-4).
Clean out your skillet and add your bacon and cook until crispy, remove from skillet and drain on paper towels and then crumble (Photos 5 & 6).
Add your crumbled bacon to your bowl with tater tots and cheese and stir. Then add in to a 9″x13″ baking dish that has been sprayed with non-stick cooking spray (Photos 7-9).
In bowl add your milk, eggs and seasonings and whisk together until smooth then pour over your tater tots in your casserole dish and bake in oven at 350 F. for about 1 hour until golden and crispy (Photos 10-12).
CAN THIS BREAKFAST CASSEROLE BE MADE AHDEAD OF TIME:
I would’t recommend making this ahead of time. The tater tots need to be frozen in this recipe to bake correctly. If you were to make it ahead of time, I would cover with plastic wrap and probably reduce the cooking time slightly.
This Tater Tot Breakfast Casserole recipe is such a classic that everyone loves. There are so many other add-ins that you could add as well such as pepper, mushrooms, etc.
This is such a basic recipe, that we love to add meats and cheese too. Meat is a really large part of our diet, so when it comes to breakfast casseroles we love to add them!
TIPS AND TRICKS:
- Use frozen tater tots for this recipe. I have not tried with thawed tater tots so I do not know the outcome, or if it would become overly soggy.
- Drain the fat off of your sausage and onion mixture before adding it to your tater tots, this reduces sogginess and unnecessary grease in your recipe.
- Use whatever cheese you like, we personally like Colby Monterey Jack cheese but cheddar works well as well, and we regularly use that when we don’t have the other version on hand.
- Sprinkle with green onions, not only does this add a little bit of color to the dish, it gives it a nice flavor punch as well, we are huge believers in adding green onions to many things.
- I would not recommend making this the night before as the tater tots should remain frozen while baking.
- If you love cheese, sprinkle some more cheese over the top when there is about 10 minutes left of baking.

Tater Tot Breakfast Casserole
Ingredients
- 1 32 oz bag frozen tater tots
- 1 lb pork sausage
- 1 large onion diced
- 1/2 lb bacon
- 2 cups shredded colby jack or cheddar cheese
- 2 cups milk
- 6 eggs
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp cayenne pepper
- Salt and pepper
- Green onions diced
Instructions
- Preheat oven to 350.
- Spray a 9"x13" baking dish with non-stick cooking spray.
- In large bowl add your tater tots and shredded cheese.
- In large skillet add your sausage and onion and cook until sausage is no longer pink and onions are tender, drain then add to your tater tots.
- In same skillet fry your bacon until crispy, remove from pan to drain then crumble and add to your tater tot mixture and toss to combined.
- Spread into prepared baking dish.
- In large bowl whisk together milk, eggs, onion powder, garlic powder, cayenne powder, salt and pepper.
- Pour egg mixture over the tater tots and bake in oven for 60 minutes or until eggs are set.
- Remove from oven and sprinkle with diced green onions if desired.

I havenโt personally done it, but ones similar to my recipe state that you can assemble it the night before and cover. Let it come to room temperature and then bake. If you are looking to bake then refrigerate you can do that, I would slice the casserole and reheat individual slices in the microwave until heated through.

This is a delicious breakfast casserole. I have used many recipes in the past, this is our familyโs all time favorite!! I will definitely make this again. I was able to make this ahead of time and it turned really good! Tater tots were crispy on the top, and done softly in between. Loved it!

I make a version of this. But I don’t use peppers cause it gives my family heartburn. We add roma tomatoes and spinach. Feta cheese. Sooooo good

We love this dish! It’s now part of our Christmas morning brunch. Like others, I typically prep the meat and peppers beforehand (I use red and green peppers). I make a pan with only turkey bacon for a family member who can’t eat other meat. Either way, it’s delicious!!
