HOW TO MAKE SWEET POTATO DINNER ROLLS, STEP BY STEP:
- In the bowl of a stand mixer fitted with the paddle attachment, add the warm buttermilk, yeast, and honey and mix.
- Let stand for 5-10 minutes until the yeast makes the mixture start to bubble.
- Add the melted butter, sweet potato puree, and egg and mix with the.
- Change the paddle for the bread hook attachment and add 3 cups of flour, salt, and cinnamon. Knead on low, gradually adding more flour until the dough is slightly tacky, but not sticky. Then continue kneading for 5 minutes.
- Remove the dough from the bowl, spray the bowl with non-stick spray, and return the dough to the bowl. Cover with plastic wrap and let rise till doubled, about an hour.
- Spray a 9×13-inch baking dish with non-stick cooking spray and set aside.
- In a small bowl whisk together the egg, and water and set aside.
- Remove the dough from the bowl onto a clean counter and lightly punch down. Use a bench scraper to divide the dough into 15 equal pieces and roll each piece into a ball.
- Set each piece of dough into the baking dish– 3 rolls wide and 5 rolls long.
- Brush the top of each roll with the egg wash and lightly sprinkle with flakey sea salt.
- Lightly cover with plastic wrap and let rise again for about 30 minutes or until the rolls are puffy and about doubled in size again.
- During the last 20 minutes of the rise, preheat your oven to 375 F.
- Place the rolls in the oven and bake for 18-23 minutes, until the tops are lightly golden brown.
- Remove from the oven and serve.
HOW DO I MAKE THE SWEET POTATO PUREE:
There are a lot of ways you could do this. The easiest way is to poke your sweet potato with a fork all over the outside and cook in the microwave for about 5-7 minutes till soft. Remove the skin and with a fork, squish the insides.
You can also steam the sweet potato in an instant pot or bake it in the oven.
HOW DO I KNOW HOW MUCH FLOUR TO ADD?
If you live in a dry place or when it is not humid you may need less flour. Start with 3 cups of flour and add ยผ cup more at a time till the dough is just barely sticky.
Not so sticky that when you put a finger in the dough it comes out with tons of dough stuck on it, but if you put a finger in the dough and your finger sticks to the dough but comes out clean. This is called tacky.
If you add too much flour your rolls will be too dense and dry. Adding slightly too little flour is better than adding too much.
ARE THESE ROLLS REALLY SWEET?
Since we have sweet potatoes, honey and cinnamon in these – there is a sweet aspect to these rolls.
The sweetness is not overpowering and you can still taste the savory from the bread. So, yes they are sweet but not overly sweet.
WHAT IS THE BEST WAY TO GET THESE EVEN IN SIZE?
Weigh your dough and divide it by 15. Then weigh each piece of dough before you roll it out. This will yield perfectly even rolls.
Itโs my favorite way to get perfectly even and perfectly baked rolls.
HOW TO STORE:
These can be stored in an airtight container on the countertop where they will keep for up to 3-4 days.
You can also freeze these rolls. Place in a freezer container and they will keep for up to 2 months.
To defrost, remove from the freezer to the countertop until thawed. You can heat in the microwave to make warm if desired.
TIPS AND TRICKS:
- Start with less flour and then add more.
- We have only tested this recipe with rapid-rise yeast.
- These are sweet but not overly sweet.
- To get evenly sized rolls, weigh your dough.
- We like to top these with a little flaked sea salt, this is completely optional.
- DO NOT add hot sweet potato puree to the mixer, make sure it cools slightly or it will kill the yeast.
- These can be frozen, see above on how to do that.
- This is a great way to use up leftover sweet potatoes.
