Quick and easy to whip together this Streusel Topped Baked Oatmeal is the perfect breakfast or brunch recipe with a sweet and crunchy topping!
Oatmeal has always been one of my favorite recipes to eat for breakfast. I’m more of the savory breakfast person, but when it comes to sweet, oatmeal has to take the lead on that one.
Some of of my other favorite sweet breakfast recipes include: Blueberry Breakfast Cake, Vanilla Maple Baked French Toast and Homemade French Toast Sticks!
This Baked Oatmeal recipe is super easy to whip up, the oatmeal itself is made all in one bowl which makes cleanup a breeze! And who doesn’t like easy clean up!
My favorite part of this recipe is the streusel topping. It really gives it a nice crunch and amazing flavor with each and every bite, and once you have one bite you cant stop.
WHY THIS RECIPE WORKS:
- All the ingredients are readily available in your pantry if you are an avid baker or can be cheaply purchased at your local grocer.
- The streusel topping adds a unique and flavorful texture that complements this already delicious breakfast recipe.
- This recipe can be served warm or cold depending on how you like your oatmeal, either way it is delicious.
Baked Oatmeal is one of those recipes that is a fun way to switch up the normal oatmeal routine and can easily be doubled to feed a bigger crowd.
You don’t have to use the streusel topping, the recipe will work without it, but I HIGHLY recommend it because it’s just fabulous.
HOW TO MAKE BAKED OATMEAL, STEP BY STEP:
- In bowl add your milk, eggs, butter, brown sugar, baking powder, cinnamon, salt and vanilla.
- Whisk all together until everything is blended.
- Add in your oats and and stir until combined.
- Pour oat mixture into a greased 8″x8″ baking pan and set aside.
- In another bowl add flour, brown sugar and butter and crumble with fork or fingers until you get pea sized pieces.
- Sprinkle over top of your oat mixture evenly and bake for about 40-45 minutes until set and browned.
DOES BAKED OATMEAL NEED TO BE REFRIGERATED?
While it will not spoil if left out a few days, I prefer to refrigerate my Baked Oatmeal recipes. Refrigerating will let it last about 4-6 days rather and maybe 2.
We also like cut into bars and individually wrap each bar in plastic wrap so we can just grab and reheat it quickly in the microwave for a single serving.
CAN YOU BAKE WITH QUICK OATS?
Yes, you can substitute quick cooking oats in this Baked Oatmeal recipe, but the texture will be different. We usually use old fashioned oats as it hold together better.
CAN THIS BE MADE OVERNIGHT?
With this recipe I do not recommend it. The oats will soak up all the liquid and when you bake it it won’t have the same texture as if would if you baked it right away.
There are Overnight Baked Oatmeal recipes that you can search up and are an easy recipe to just make the night before and throw in the oven when ready to serve.
TIPS AND TRICKS FOR MAKING BAKED OATMEAL:
- Quick oats CAN be substituted but the texture will turn out different.
- Serve with milk or drizzled with maple syrup.
- This recipe can easily be doubled.
- You can stir in some of your favorite mix ins such as chopped nuts or chocolate chips, etc.
- You do not have to make the streusel topping if you do not want to, just bake as directed.

Streusel Topped Baked Oatmeal
Ingredients
- 1 1/2 cups milk
- 2 eggs
- 1/2 cup brown sugar
- 1/4 cup butter melted
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 tsp vanilla
- 3 cups old fashioned oats
TOPPING:
- 1/2 cup flour
- 1/4 cup brown sugar
- 1/4 cup butter cubed
Instructions
- Preheat oven to 350. Spray an 8"x8" baking dish with non-stick cooking spray, set aside.
- In bowl add your milk, eggs, brown sugar, butter, baking powder, cinnamon, salt and vanilla and whisk together until combined well.
- Add in your oats and stir until combined, pour into prepared baking dish, set aside.
- To make topping, in bowl add flour, brown sugar and butter and using fork or fingers mix together until you get pea sized crumbles.
- Sprinle over the top of oatmeal evenly and bake in oven about 40-45 minutes until browned.
- Serve with maple syrup or milk.

It’s a mix of both crunchy and soft, the outer part is more crunchy with the inner being more softer.
