Breakfast has become quite the deal around here. My kids have been more keen on home-cooked meals over bowls of cereal, waffles, oatmeal and the like. So, we have been brainstorming lately on what they would like me to make more of for them. They absolutely love French toast, but sometimes I just like to switch up the normal routine.
That’s exactly what we decided to do! My kids don’t just like French toast, they are also muffin fans, so we put our heads together and decided to make Strawberry French Toast Muffins. Can you say best of both worlds? These were easy, tasty and they went over well with not just the kids, but the adults as well.
I’m not going to lie when I say that my kids are picky. Like they are some of the pickiest of eaters I’ve ever encountered. For the longest time I had to refer to things in food as “seasoning” so they wouldn’t know it was actually peppers, onions, olives, etc. That lasted about as long as it takes between my boys fights, and if you are a mother of boys, you know exactly how long that is.
So I decided to start including the kids in on menu planning so that we would be able to come up with some wholesome ideas that were quick, tasty and they would actually enjoy! These Strawberry French Toast Muffins were a great choice. With just under 300 calories per serving, we utilized Carnation Breakfast Essentials Strawberry Powder Drink Mix to add some added nutrients and flavor to our breakfast!
Carnation Breakfast Essentials are a great option for the whole family. They come in easy to use packets that you can just mix into fresh milk, or to stir into your breakfast, snack or even dessert recipes to give it a little extra flavor and added convenience. It’s something we like to stock up on, with the kids back in school its a great grab in go (It also comes in ready to drink bottles) option to add to your morning routine.
We like to keep things as simple and easy as possible around here. Let’s just say, kids surely don’t like to wait around to long, especially when it’s for the most important meal of the day! So these Strawberry French Toast Muffins are a breeze to make! All you need to do is toast up some bread (of if you have already day old stale bread even better!) mix together, milk, eggs, Carnation Breakfast Essentials Strawberry Powder Drink Mix, vanilla, cinnamon and mix!
Put it all into a muffin tin and bake it up until it’s nice and golden. If you are a big fan of bread pudding (which this family is) then you’ll love these! These have the texture of bread pudding on the inside, and nice and crispy on the outside. So it’s pretty much the best of both worlds you’re getting for breakfast!
Then comes the good part, probably the most favorite part of the breakfast! The glaze. I’m a glaze type of girl, and since these aren’t your ordinary French toast, we didn’t want to go with just a normal syrup, so we made a strawberry cream glaze from some powdered sugar, Carnation Breakfast Essentials Strawberry Powder Drink Mix and milk! How easy (and tasty) is that!

Strawberry French Toast Muffins
Ingredients
- 1 loaf white bread cubed
- 2 cups skim milk
- 2 pkg Carnation Breakfast Strawberry Powder Drink Mix
- 6 eggs
- 1 tsp vanilla
- 1 tsp cinnamon
GLAZE
- 1/2 cup powdered sugar
- 1 pkg Carnation Breakfast Essentials Strawberry Powder Drink Mix
- 2-3 Tbs milk
Instructions
- Preheat oven to 350.
- Place your cubed bread on a sheet pan and bake for about 10 minutes, stirring halfway through until slightly crisp, remove, add to large bowl and set aside.
- In large bowl mix together your milk, Strawberry Carnation Breakfast Essentials Powder, eggs, vanilla and cinnamon.
- Pour your milk mixture over your cubed bread and stir, let sit for about 5 minutes or until milk is soaked up.
- Liberally spray a 12 count muffin tin with non-stick cooking spray, divide your bread mix evenly among cups.
- Bake for about 30 minutes or until center is set and muffins are golden.
- Remove from oven and let cool for about 5 minutes before removing to cooling rack.
- Meanwhile in small bowl stir together your glaze ingredients, spoon over the tops of your muffins and serve warm.
