We love cheesecake in any way, shape or form around our house. Mini Cheesecakes are super fun because you get your own little hand-held treat to yourself.
If you want a cheesecake that will blow your mind in flavor, then you have to try my recipe for Snickers Mini Cheesecakes.
These desserts are good for any and all occasions, sometimes we just throw them together just to have around – they are just that good.
Add some more chopped Snickers to the top and drizzle with some chocolate and caramel sauce and you have an over the top dessert.
These are absolutely kid and adult friendly. Snickers are one of my favorite candy bar and they work perfectly and pair so well with the flavorings in thie recipe.

WHY THIS RECIPE WORKS:

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Oreo crumbs
Unsalted or salted butter
Cream cheese
Sour cream
Granulated sugar
All-purpose flour
Vanilla extract
Eggs
Snickers
Caramel and chocolate syrup, for drizzling (optional)
HOW TO MAKE SNICKERS MINI CHEESECAKES, STEP BY STEP:
- Preheat oven to 350 degrees F and line a standard sized muffin tin with paper liners. Set aside.
- Combine the Oreo crumbs and butter in a small mixing bowl until well mixed.
- Add 2 Tablespoons of the Oreo mixture to your cupcake liners and use the back of a small glass or your hands to press the crust down into the liners.
- Bake the crusts in the oven for 8 minutes. Remove from the oven to cool while preparing the cheesecake filling.
- Use an electric mixer on medium high speed to blend the cream cheese and sour cream until smooth.
- Mix in the granulated sugar, flour, and vanilla extract.
- Add in the eggs to the cream cheese mixture, one at a time, until incorporated.
- Fold in 1 cup the chopped Snickers.
- Fill cooled paper liners ยพ full with the cheesecake filling.
- Return the baking pan to the oven and bake the cheesecakes for 15 minutes.
- Once they have finished baking, turn the oven off and keep the door closed for 8 minutes. Then crack the door open and allow the cheesecakes to cool in the oven for 5 minutes.
- Transfer the cheesecakes to a wire rack and top each cheesecake with the remaining chopped Snickers.
- Once the cheesecakes have come to room temperature transfer them to the refrigerator to chill for at least 1-2 hours before serving to set.
- Drizzle with caramel sauce and chocolate sauce before serving if desired, enjoy!
CAN THIS RECIPE BE DOUBLED?
Absolutely! We love doubling this recipe, especially when we are bringing these to gatherings.
You can use a 24 cup muffin tin, or two 12 cup muffin tins for this. You may have to bake slightly longer if you are baking more at the same time.
Just check the doneness and make sure that they are not super jiggly in the middle.
WHAT OTHER CANDY BARS CAN I USE IN THIS MINI CHEESECAKE RECIPE?

DO I HAVE TO USE OREOS AS THE CRUST?
If you are not an Oreo fan, you can use chocolate graham crackers for the crust as well.
If you want to eliminate the chocolate crust you can use regular graham crackers or vanilla wafers for the crust too.
WHAT IS THE BEST CREAM CHEESE TO USE IN CHEESECAKES?
If you want that rich and creamy flavor and texture, then you will absolutely want to use full fat cream cheese. This also includes full fat sour cream.
I would not skimp on that, that is what makes cheesecake cheesecake if you know what I mean.
HOW TO STORE:
These can be stored in the refrigerator in an airtight container where they will keep for up to 4-5 days in the refrigerator.
They can also be frozen, to do this I would not top your cheesecakes with anything and leave them plain. Place in a freezer safe container and they will keep for up to 3 months.
To defrost, remove to the refrigerator until thawed. Then top with your toppings and serve.
