A delicious dinner packed with vegetables and seasonings this Slow Cooker Sunday Roast is a tasty and amazing dish that will feed the whole family.
Have I stressed to you how much I love using my slow cooker? I really saves the say when you have four kids and a busy schedule, well not so busy these days but still busy enough.
I love being able to throw something in and let it cook where I don’t have to worry about it until hours later and that is exactly what this Sunday Roast accomplishes.
I grew up on roasts, my mom would make them a couple times a month. I had gotten sick of them for the longest time, but then I started making them for dinner for my family.
When you get older you learn to appreciate the things that your mom would cook for you and then you are able to do that with your children as well.
So this recipe brings up a lot of good memories of my childhood because Sunday Roast was one of her specialties, and we have come to absolutely love it.
It is not hard at all to make which is the best part, just some chopping of vegetables and searing of meat is all you really need to do in preparation for this meal.
Other than that, throw it in the slow cooker and 8 hours later you have yourself a meal that is so comforting and will leave you full in the end.

HOW TO MAKE SLOW COOKER SUNDAY ROAST, STEP BY STEP:
- Heat olive oil in a large skillet. Sprinkle both sides of roast with salt and pepper and place in hot skillet. Sear both sides of the roast.
- Place potatoes, onion and carrots in the crockpot. Place the meat on top of the potatoes, then add the celery, garlic, rosemary and thyme.
- In a small bowl whisk the tomato paste, Worcestershire sauce, broth and cornstarch. Pour over the roast.
- Place the lid on and turn on low for 8 hours.
- When roast is cooked, shred or cut the meat and serve with the vegetables and gravy.
How easy is that? Sunday Roast’s can look a little intimidating, but trust me there is really nothing to be intimidated about, they are super easy to make.
And once you start making them you will want to make them all the time, it really brings the family together and that is what we love the most.
WHAT IS A SUNDAY ROAST?
It is a traditional main dish meal that comes from Britain that is traditionally served on Sundays. The Roast consists of roasted meat and served with vegetables such as potatoes, carrots, celery etc.
Then it is served with a gravy made from the drippings from the meat, which we accomplish with making a roux with the broth and cornstarch added to the slow cooker.
Let’s just say that this is an amazing hearty meal that is great obviously to make on Sunday’s but also good for any night of the week. The name is just a name from tradition!
WHAT ROAST IS BEST FOR THIS?
We absolutely prefer a Chuck Roast for this recipe, it is tender and easily falls apart after you cook it making it easily to spread which is the way we like to eat this.
Our second favorite option would have to be a Round Roast (any kind) it won’t be as tender as the Chuck Roast but it will be more of a slicing roast that you can still easily eat.
Other roasts include rump and brisket, but the top two listed are our go to ones when making this Sunday Roast.
HOW TO STORE:
This is good stored in the refrigerator, just place everything in a airtight container and it should stay good for up to 3 days, just reheat in the microwave.
I really don’t like to freeze this after cooking because it has the vegetables, and freezing and rewarming those is something I personally don’t like to do as they will turn mushy.
But you can freeze the cooked roast itself without the vegetables, you can place it in a freezer bag or airtight container and it will keep in the freezer for 2-3 months.
This Slow Cooker Sunday Roast really is such a delicious and filling meal that I highly encourage you to add to your menu! You won’t be disappointed.
Like I stated before we have been having this for years and my family absolutely loves it and it can be catered to your liking spice and vegetable wise.
TIPS AND TRICKS:
- We like to use a chuck roast for this recipe because of the texture, but you can see other options above.
- This makes it’s own gravy which is amazing, we like to remove the roast and vegetables to a serving platter and pour the gravy in a gravy boat to pour over the top.
- This can use fresh or dried herbs, fresh is my favorite but if you can’t find them dried will work fine.
- Properly stored in the refrigerator this will keep up to 3 days.
- You can freeze this, but I would recommend only freezing the roast itself after cooked.

Slow Cooker Sunday Roast
Ingredients
- 3 lb boneless chuck roast
- 1 Tbs olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 1/2 lbs small potatoes or large potatoes diced Russets, Reds, Yukon Gold, ex.
- 1 yellow onion cut into large pieces
- 6 large carrots peeled and cut into 2-inch pieces
- 4 celery stalks cut into 2-inch pieces
- 3 cloves garlic
- 4 sprigs thyme or 1 teaspoon dried thyme
- 2 sprigs rosemary or ยฝ teaspoon dried rosemary
- 2 Tbs tomato paste
- 2 Tbs Worcestershire sauce
- 2 cups beef broth
- 2 Tbs cornstarch
