Love Sloppy Joes? Love pasta? Then you’ll love this easy combination of the two with this Sloppy Joe Casserole. Done in under 30 minutes it’s an easy weeknight meal.
Sloppy Joes are one of those recipes that have long been loved and made by so many families. They are absolutely one of our most loved recipes in our house.
How about switching it up and taking your normal routine and turning it into something else? This Sloppy Joe Casserole is one of our most requested recipes ever.
We first posted this recipe back in 2020, and overtime we just decided it needed a little facelift. Trust me when I say that you will absolutely love this recipe.
It is adult and kid friendly, you can leave out the onions and peppers if your kids do not enjoy them, but we feel like they are an added bonus that really give this dish some flavor and contrast.
When it comes to this Sloppy Joe Casserole (we call it a casserole even know it’s not baked) you really can’t get much easier when dinner time rolls around.
Serve this with a side salad, some garlic bread or just have it as is. It is a hearty meal that you will want to make over and over again.

WHY THIS RECIPE WORKS:
- With only 6 ingredients it’s super easy to whip up when you are in a time crunch.
- Using canned sloppy joe sauce cuts the work in half, although you can make a double batch of your own.
- This feeds a whole family, and everyone loves it.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM):
Ground beef
Onion
Green
Sloppy joe sauce, your favorite
Rotini
Shredded cheddar cheese
HOW TO MAKE SLOPPY JOE CASSEROLE, STEP BY STEP:
- In large pan add the ground beef, onion and green pepper and cook until ground beef is no longer pink and vegetables are tender, drain off any excess grease.
- Add in your sloppy joe sauce and stir to combine and heat for a few minutes until it simmers.
- Add in the cooked pasta and stir to coat.
- Then add in 1-1 1/2 cups cheddar cheese and stir in until melted.
- Once combined top with remaining cheese and heat on low until cheese is melted (you could also cover pan to help melt cheese).
- Garnish with parsley if desired.
WHAT KIND OF PASTA SHOULD I USE?
You can use any type of pasta that you like. We like to use rotini or corkscrews because they hold in the sauce better and produce more.
What I wouldn’t recommend using is any style of pasta like spaghetti, linguine or fettuccine. They just don’t seem to work well with this unless you make the sauce separate and serve it that way.
DO I HAVE TO USE CHEESE?
Absolutely not. While I feel cheese gives it a little depth of flavor and texture you really don’t have to include it in the recipe if you don’t like.
I know as a kid we would always slap a slice of cheese on our sloppy joes so when it came to making this Sloppy Joe Casserole it was just something we naturally added in.
CAN I LEAVE OUT THE ONIONS AND PEPPERS?
If you are not a fan of onions and peppers you can absolutely leave them out. We just like the added contrast in texture and flavor that it gives this dish.
HOW TO STORE:
You can store this in your refrigerator in an airtight container such container for 2-3 days.
This can also be frozen, place in a freezer container and it will keep for up to 3 months. To defrost, remove from the freezer into the refrigerator overnight until thawed.
You can reheat this in the microwave until warmed through.
TIPS AND TRICKS:
- Use any of your favorite pastas, see some of my suggestions above.
- Use any cheese you like, we prefer cheddar so we go with that, but also love Colby Jack blend as well.
