Easy, flavorful and full of tradition, this Reuben Sandwich Recipe is tasty, a quick recipe and one that you’ll love.
It’s getting to that time of year where Reuben Sandwiches are going to be popping up everywhere.
If you ask me, I don’t think there is any specific time of year that these shouldn’t be popular as we make them all year long for lunch, dinner and anytime in between.
The combination of the meat, bread, sauerkraut, dressing and cheese really sets this Reuben Sandwich Recipe apart from all other sandwiches.
I’ll admit, we make these too often as this is one of my husband and son’s favorite sandwiches in the world.
Also making the dressing from scratch is something we like to do, you don’t have to but it’s just a person preference for us.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Mayonnaise
Sour cream
Ketchup
Relish
Fresh lemon juice
Horseradish
Kosher salt
Coarse ground pepper
Deli corned beef
Unsalted butter
Sauerkraut
Rye bread or rye and pumpernickel swirl bread
Swiss cheese
Dill pickles, optional
HOW TO MAKE A REUBEN SANDWICH RECIPE, STEP BY STEP:
- Mix all the dressing ingredients together with a fork or a whisk until combined. Refrigerate until ready to use.
- Preheat a skillet or griddle to medium low heat while you assemble sandwiches.
- Butter one side of each slice of bread, flip the bread over and spread the dressing on the other side of each slice.
- Place a piece of Swiss cheese on top of each of the dressing sides, so each sandwich will have a total of 2 pieces of cheese.
- On one side layer a generous amount of warmed meat followed by your desired amount of warmed sauerkraut.
- Top with the other piece of bread with the dressing and cheese, keeping the buttered side up.
- Cook your sandwiches for about 5 minutes per side until the sides are golden brown and the cheese is melty. If it cooks too fast, lower heat. You want the sandwiches to cook for a while, so they get fully melted and warmed through.
- Cut in half and enjoy with pickles and potato chips.
WHY DO THE BEEF AND SAUERKRAUT NEED TO BE WARMED?
Warm the corned beef and sauerkraut in the microwave before assembling your sandwich or it will not be warmed in the end.
The sandwiches don’t cook long enough to get them completely warmed in the middle without burning the bread so pre warming the meat and sauerkraut slightly will help get the sandwich nice and melty and hot for you.
WHAT CAN I USE IF I DON’T WANT TO MAKE HOMEMADE DRESSING?
While making the homemade dressing is super easy you can choose to not make homemade.
If you don’t want to make a homemade dressing, you can use thousand island dressing in its place.
CAN I USE ANOTHER TYPE OF CHEESE?
If you want to keep with tradition they swiss is the way to go and I highly recommend using that.
But if you are absolutely against swiss, I would try provolone in it’s place.
WILL THE SAUERKRAUT MAKE THE SANDWICH SOGGY?
It can if you do not drain your sauerkraut well before using, make sure that you get as much moisture out of it before you are using it on your sandwich.
HOW TO STORE:
This Reuben Sandwich Recipe is best eaten when it is first made so only make it when you are going to eat it.
You can store the dressing in an airtight container in the refrigerator where it will keep for up to 5 days.

- 3 Tablespoons mayonnaise
- 2 Tablespoons sour cream
- 1 Tablespoon ketchup
- 1 Tablespoon relish

- 1 1/3 cups sauerkraut drained and warmed slightly
- 8 slices rye bread or rye and pumpernickel swirl bread
- 8 slices Swiss cheese
- Dill pickles optional
