HOW TO MAKE P.F. CHANG’S CHICKEN LETTUCE WRAPS:
- Before cooking, make sure you have everything available on hand, prepped, and ready to cook. These lettuce wraps go together super quickly.
- In a small bowl, mix together the dark soy sauce, wine, sugar, and oyster sauce, set aside.
- Place a large skillet or wok over medium-high heat. Once hot, add the oil and swirl it around the pan to coat. Add the chicken, mushrooms, water chestnuts, and white part of the green onions to the pan. Season with a pinch of salt and pepper. Break up the chicken into small crumbles, tossing everything to combine. Lightly brown the chicken, stirring occasionally, until fully cooked through. About 8 minutes total time.
- Pour the sauce into the pan and stir to combine everything in the sauce. Keep cooking for about another 2 minutes just to ensure everything is well coated in the sauce and any excess has time to evaporate.
- Stir in half of the green part of the onion.
- Take off the heat and serve with the lettuce cups and the remaining green part of onions to top each wrap. You can serve the head of lettuce right on the table so everyone can rip off a lettuce cup to serve themselves or, you can separate the lettuce leaves and place them on a plate before serving.
CAN I USE SOMETHING OTHER THAN SHAOXING WINE?
If you can’t find Shaoxing Wine in your local grocer you can always find it on Amazon but other things will work in its place! No worries.
Any dry white wine or rice wine will work in its place, or you can even use chicken stock or water in a pinch.
IS BUTTER LETTUCE COMMONLY USED?
Traditional for P.F. Chang’s uses iceberg lettuce but butter lettuce is so convenient it makes its own cup so you don’t have to cut it and it is pretty for presentation.
You can absolutely use iceberg lettuce if you’d like, we just prefer to use the butter lettuce because it is convenient and holds everything together well.
CAN I USE A DIPPING SAUCE?
I love to serve these as-is, but you can also serve these with a sauce. I suggest a potsticker-type sauce, teriyaki, or Chinese hot mustard.
But feel free to use whatever you would like with these, it all comes down to personal preference in the end!
HOW TO STORE:
The filling can be stored in an airtight container in the refrigerator where it will keep for up to 4-5 days. You can reheat your chicken in a skillet or in the microwave.
TIPS AND TRICKS:
- We use butter lettuce for this where P.F. Chang’s uses iceberg, so you can choose which one you would like.
- Ground pork can be substituted for chicken for a different flavor if you want.
- If you cannot find Shaoxing Wine any dry white wine will work or stock, see my tips above.
- We do not recommend freezing these.
- Store the chicken and lettuce separate when using as leftovers.
- Feel free to use any dipping sauce you like I have some suggestions above, but we usually serve these as-is.
