Creamy, and delicious these Lemon Raspberry Cheesecake Bars are packed full of lemon, fresh raspberries and topped with a dollop of whipped cream, the perfect dessert for Spring and Summer!
Cheesecake bars are one of the easiest and best desserts around. There are so many versatile flavors that you can swap it out with that there are limitless combos and flavors you can come up with.
We are huge fan of cheesecake around here, you can see some of our faves with this New York Cheesecake, Creme Brรปlรฉe Cheesecake and this Coconut Cream Cheesecake. All have become favorites in this house hold and all have minimal ingredients that you probably have in your house right now!
INGREDIENTS NEEDED:
- Graham cracker crumbs
- Sugar
- Butter
- Lemon juice
- Lemon zest
- Cream cheese
- Eggs
- Raspberries
As much as I love your typical cheesecake, sometimes Cheesecake Bars are something that is needed to be made and takes slightly less time than the latter. These Lemon Raspberry Cheesecake Bars are fun and addicting and are so fresh with the flavor.
HOW TO MAKE CHEESECAKE BARS:
- Preheat oven to 325.
- Line a 9″x13″ pan with tinfoil, set aside.
- In bowl stir together graham cracker crumbs, sugar, lemon zest and butter.
- Press mixture into prepared pan and bake in oven for 10 minutes.
- Meanwhile in large bowl beat your cream cheese until smooth.
- Add in your sugar, lemon juice and lemon zest and beat again until combined.
- Add in your eggs one at a time, mixing well after each addition.
- Fold in 2 1/2 cups of your raspberries and pour into crust and spread evenly.
- Bake in oven for 35-40 minutes until center is almost set, remove from oven and let cool completely
- Refrigerate for 4 hours to set, then cut into bars and top with whipped topping, lemon zest and raspberries if desired.

- Adding in eggs one at a time helps blend a liquid into a fat and gives it time to combine at a rate better then adding them all in at once.
- Add lemon zest to the crust, gives it an extra lemon boost.
- Fold in your raspberries gently, it helps them stay together instead of break up. You can add them in and mix harder to break them up to disperse the raspberries more if you would like.

This sounds absolutely delicious. BUT, I live in Ireland and NEVER see the โblocksโ of cream cheese here….. only the plastic boxes of SOFT spreadable cream cheese. Can I use that instead of the block variety?? Or should I add another egg perhaps.
I hope there is a remedy for this problem, as Iโd love to make this recipe.

The spreadable cream cheese will work, it will all get beaten together anyways, as long as they are the same amounts.
