So it took me a long time to really find my groove with vegetables. I’m not the raw vegetable type and have come to the conclusion that when veggies are steamed or baked or roasted that is how I prefer them.
My family is big on side dishes as well as vegetables and these Roasted Carrots are one of our easy and favorite sides to make any time of year, but especially the colder weather months.

WHAT INGREDIENTS DO YOU NEED?

- Salt

How can you go wrong with those minimal ingredients? Like I said this recipe is super simple and one that makes a fun and easy yet super flavorful side dish to any meal.
Carrots are my youngest sons favorite vegetable, well that and broccoli so he can eat them day in and day out.

We generally just go through a lot of carrots in this house whether it be in soups, side dishes, desserts or a veggie platter we are always having a bag of them on hand at all times.
Now these oven roasted carrots whip up in just minutes and bake fairly quickly depending on how crisp you want your carrots to be in the end came.
I like mine with just a little bit of snap behind them but mostly tender, just so they are able to hold their shape but yet also fall apart right in your mouth!
HOW DO YOU MAKE ROASTED CARROTS?
- Preheat oven to 350.
- Peel your carrots and trim off the ends and slice into finger length slices then cut those in half.
- Place carrots into a bowl and drizzle with olive oil and toss to coat.
- Next drizzle with honey and toss again to coat.
- Spread onto a baking pan, sprinkle with salt and pepper and bake in oven for about 30-40 minutes until fork tender.
- Remove from oven and place on serving dish and sprinkle with parsley if desired.

These are by far one of our favorite oven baked carrot recipes around. We also like adding some brown sugar and bacon every once in awhile to switch it up a little.
In reality I like a little bit of sweetness with my carrot based side dishes, I think that it really pulls out the flavor really well and thats pretty much what I’ve been doing since making them for all the things.

Ingredients
- 8 carrots peeled with ends trimmed off and halved
- 3 Tbs olive oil
- 1/4 cup honey
- Salt and pepper
- Parsley optional
Instructions
- Preheat oven to 350.
