Easy, puffy and delicious these German Pancakes are a fun twist on a traditional pancake recipe that puffs up golden brown in one pan!
Growing up my grandma was primarily German, if not 100%, I forget sometimes. I know that my grandmas mom spoke strictly German most of the time.
This German Pancake recipe was something that must have been passed down to my mother, I remember as a kid she used to whip them up all the time, they absolutely were a family hit.
They make a whole pan or skillet full and they are super easy. Like fool proof easy.
WHAT IS A GERMAN PANCAKE?
Sometimes they are also referred to as a Dutch Baby. They are a pancake made from eggs, milk sugar and vanilla and baked in a pan or a heavy cast iron skillet..
We have made them both ways and regardless of which way you make them we love them regardless. They are an “American” version of a popover.
A lot of people like to serve them with a sprinkling of powdered sugar and lemon juice. We like to serve ours with fresh fruit and syrup. We like to use our homemade syrup a lot of the times.
WHAT INGREDIENTS DO YOU NEED?
- Eggs
- Flour
- Butter
- Sugar
- Salt
- Vanilla
- Powdered sugar (optional)
- Fresh fruit (optional)
- Syrup (optional)
So the question is how do those little ingredients make such a puffy pancake? So let’s get into a little science shall we?
Heat begins to mix with the gluten in the egg proteins and the gluten which pretty much creates a flexible area. Like in a popover the water inside the “shell” creates steam making it inflate like a balloon would.
The edges remain puffy as there is more area while the center remains more shallow and custardy. Hope that helps answer any lingering questions.
HOW TO MAKE GERMAN PANCAKES:
- Preheat oven to 400.
- Place butter in a 9″x13″ pan and place in oven to melt.
- Meanwhile in blender or food processor add your eggs, milk, flour, salt and vanilla.
- Blend for about 30 seconds or until smooth.
- Remove pan from oven and gently pour your batter over the melted butter and place back in oven and bake for about 20-25 minutes until puffy and golden.
- Sprinkle with fresh fruit and powdered sugar.
SUPER EASY! I’m telling you people, this is such a great alternative to pancakes! I mean I love pancakes, don’t get me wrong but finding other ways to eat them is always fun.

That is where this German Pancake recipe comes in super super easy. Like I said the texture on the corners is more like a popover and the center is more like a custard.
It is absolutely one thing you will have to whip up at some point in your life. They are worth it for sure. They are super popular here in the midwest.
