An easy weeknight recipe for a side or small main dish, this Dirty Rice with Sausage is easy, tasty and goes great with so many different things.

I have always been a fan of dirty rice, but I also like taking short cuts and making things my own and changing them up a little bit.
This Dirty Rice with Sausage is not your “traditional” dirty rice, but an easier version that just is full of flavor and texture.
It makes a great side dish to many meals, or a small dinnertime recipe for those nights where you just want something quick and easy.
With the spices and meat, you really cannot get enough of this recipe. Dirty Rice with Sausage is a go-to a lot around here.
Plus it doesn’t have that many ingredients and the ones that it has are easy to find so you should have no trouble making this recipe at all.

WHY THIS RECIPE WORKS:
- All the ingredients are easy to find in your local grocery store.
- You can use kielbasa, smoked sausage or even andouille if you’d like a little spice.
- This is all done in roughly 40 minutes from start to finish.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Unsalted butter
All-purpose flour
Beef kielbasa
Ground cumin
Smoked paprika
Pepper
Vegetable broth
Garlic
Cooked white rice
Green onions, thinly sliced
HOW TO MAKE DIRTY RICE WITH SAUSAGE, STEP BY STEP:
- First, make the roux by placing the flour and 4 tablespoons of the butter into a small skillet over medium heat and whisk together.
- Continue to whisk until the mixture turns medium to dark brown, about 5 minutes. Set aside off the heat.
- Place a Dutch oven or thick-bottomed large skillet over medium heat. Melt the remaining butter.
- Add the kielbasa, cumin, pepper, and paprika.
- Brown the sausage, fixing it with the spices and letting it brown. Bits will stick to the bottom of the pan.
- Deglaze the pan with ½ cup of the stock, scraping off all the browned bits on the bottom of the pan.
- Add the garlic and mix in until fragrant, about 1 minute.
- Add the roux and stir until well combined.
- Cook uncovered for 10 minutes, adding the remaining stock slowly so the mixture doesn’t completely dry out. Stir occasionally. If it seems too juicy, continue cooking until most of the liquid is absorbed.
- Add the rice and green onions, stir to combine everything, and serve.
WHAT IS THE POINT OF THE ROUX?
This thickens the liquid up more but it is also super flavorful and adds a rich flavor that you can’t get otherwise.
So I highly recommend you do not skip this otherwise the recipe will not turn out correct.
CAN I ADD VEGETABLES?
Some other vegetables that we like to add to this recipe include diced onion, celery and red pepper.
It gives it a little more flavor and texture if you are looking for that. I would add that when you are cooking the kielbasa.
WHAT OTHER MEATS CAN I USE?
While we love kielbasa you can also use smoked sausage, breakfast sausage or andouille for an extra kick.
CAN I MAKE THIS SPICIER?
Absolutely, when we aren’t feeding our picky kids who do not like the heat we love to add some red pepper flakes, cayenne pepper or chipotle powder.
HOW TO STORE:
This can be stored in an airtight container where it will keep in the refrigerator for up to 5 days.
You can also freeze this recipe, place in a ziptop bag or freezer container and it will keep for up to 3 months.
To defrost remove to the refrigerator until thawed. To reheat, place in the microwave until heated through.
