The holidays are around the corner, I like saying that because holidays are pretty much my favorite tie of year, but I hate saying that because it means that its about to get real cold around these parts.
When you have comfort food to fall back on, it kind of makes everything just a little bit better. This Corn Casserole is one of my families favorite recipes and we make it every year.
This great side dish is perfect for any holiday, Easter, Thanksgiving, Christmas you name it we make it for ALL of them! It’s one of those dishes that everyone loves and there usually isn’t anything left over in the dish.
So my secret to my corn casserole recipe is that I like to add a little sugar to my mixture. With all the savory I like to cut it with a little bit of sweetness just balance the flavors out a little bit.
If you have been following me for some time, you’ll know that I like to add sugar to a lot of my savory dishes, especially my pasta salads. It really just adds that much more to the flavor, trust me.
WHAT INGREDIENTS DO YOU NEED?
- Jiffy corn muffin mix
- Butter
- Corn
- Creamed corn
- Sour cream
- Eggs
- Sugar
Can you believe that this is made in just one bowl! This cream corn casserole recipe is also known as Jiffy Corn Casserole in my family, when they ask for it they usually refer to it by that name since we have also made other versions but this is the one that they like the best.
This is nice and fluffy, which attributes to the addition of the eggs. If you like a less fluffy version by all means leave out the eggs and it will be a little more dense and creamy.
Corn casserole of some type has been served at family gatherings since I was a kid, I used to never like it. You know how kids are. I would try it and like it when I was on a corn kick and then the next year I would be completely against it.
Now I have kids of my own who go through the same phases as myself and now I truly realize how my parents felt and what they meant by that they wish I have kids who turn out just like me. Lol, only kidding…kinda.
HOW DO YOU MAKE EASY CORN CASSEROLE?
- Preheat oven to 375.
- Spray a 9″x13″ baking dish with non-stick cooking spray, set aside.
- In large bowl add all your ingredients and stir until combined.
- Pour into prepared baking dish and bake for about 35 minutes until golden and puffy.
- Remove from oven and let cool slightly before serving.
This recipe is super simple and even my kids have made if for me for the holidays since it pretty much is fool-proof! It gives them the perfect learning and hands-on experience in the kitchen that they crave.
I mean I love that my kids are so interested in learning how to cook, I feel like I’ve taught them some valuable knowledge. While some people think that learning to cook isn’t super important, trust me it is.
My dad doesn’t quite know how to cook to the point that he was watching my kids one day and they wanted some spaghettio’s and he didn’t know how to run the can opener, so he used a beer bottle opener and poked holes all around the top of the can so he could get it out.
So words to the wise my friends, teach them how to cook, it will save money in the long run I tell you!
