Ok so PSA people PSA! I love sweets, I’m trying my hardest to cut back on my sweet intake…key word TRYING. But I’ve never claimed my recipes to be healthy, or good for you, good yes. I believe that I can eat anything I want as long as it is in moderation. I wholeheartedly believe that. I can not cut out my fave dessert or treats because I would be one seriously crabby lady…trust me.
So in conclusion to that little rant…if you’re here looking at this delicious Cookies and Cream Coffee Cake, you’re probably thinking the same way as me…and we can be best friends forever. And you can send me more sweets because sometimes I just don’t like to cook, and then I get really sad because I don’t have any treats to nibble on. Deal?
Anyways, so I’ve had this Cookies and Cream Coffee Cake on my list for a while to make. I’m so happy I did. Oreo’s are one of my ultimate favorite cookies to bake with and I wasn’t really feeling a layered cake since that is typically how you see Oreos being used. I also wasn’t really feeling the cheesecake route either, so coffee cake it came to be.
Coffee cake is one of those staples for weekend breakfast or brunch. I know I grew up with a delicious coffee cake at least every other weekend. The flavors are literally endless when it comes to them. My mom’s favorite has always been cream cheese, but she doesn’t stray too far from the norm. Some times we got the fruit ones or a brown sugar one if she felt like appeasing my dad and I.
One of my all time favorite ones is this Banana Crumb Cake. I need to take new picture of that, it is hands down my FAVORITE coffee style cake ever. But I may be bias because I’m literally addicted to any and all things banana. But that’s a good thing right? Technically a banana is a fruit, although I prefer it baked into things so that may negate the purpose.
This Cookies and Cream Coffee Cake is a fun, easy cake that the kids will even love. Trust me, trying to get kids to eat “Coffee Cake” has never gone over well in my house. I don’t know if it’s the name, the look (it’s not covered in frosting) or what. But when I told them that I made Cookies and Cream Coffee Cake they were all for it.
There is something special about this cake too. In the middle there is a nice ribbon of a cream cheese and cookies and cream mixture. What?!?! Filled and topped with cookies and cream? How delicious is that? I think this is a super fun way to enjoy your favorite cookies.
Cookies and Cream Coffee Cake
Ingredients
- 1 cup butter softened
- 1 cup sugar
- 2 eggs
- 1/2 cup sour cream
- 1 tsp vanilla
- 2 cups flour
- 2 tsp baking powder
FILLING
- 2 8oz pkg cream cheese, softened
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla
- 3 Cookies and Cream candy bars roughly chopped
TOPPING
- 1 stick cold butter cubed
- 1/2 cup flour
- 1/2 cup sugar
- 1/2-3/4 cup crushed Oreos
GLAZE
- 1 cup powdered sugar
- 1-2 Tbs milk
Instructions
- Preheat oven to 350.
- To make your filling beat together your cream cheese, sugar, egg and vanilla and mix until creamy. Fold in your chopped candy bar and set aside.
- Meanwhile, in large bowl beat together your butter and sugar until light and fluffy, add eggs one at a time and beat until blended.
- Mix in your sour cream and vanilla until combined.
- Slowly add your flour and baking powder and continue beating until all mixed together.
- Grease a 9x13" pan with non-stick cooking spray and add about half of your batter to the bottom of pan (batter will be thick so spread as good as you can).
- Spread your filling over the cake batter.
- Drop dollops of the remaining batter over the top, then using a butter knife spread over to make sure all is covered.
- In bowl combined all your topping ingredients and using a pastry blender or two forks blend until crumbs form.
- Sprinkle over the top of your cake and bake for about 50-60 minutes or until center is set.
- Remove from oven and let cool slightly, while cooling mix your glaze ingredients together in bowl.
- Drizzle your glaze over the top, cut and serve.
