I have to admit that I’m a lemon lover. Now my husband on the other hand is not. But that’s ok, because I don’t like to share half the time anyways so these Cake Mix Lemon Squares I can have all the time all to myself.

Easy dessert recipes are essential in my house. I have a HUGE sweet tooth and I like to have desserts that I can easily whip up and these Cake Mix Lemon Squares are absolutely falling in that category.
INGREDIENTS NEEDED:
- Lemon Cake Mix
- Egg
- Butter
- Sweetened condensed milk
- Lemon juice
- Lemon zest
Yes, literally this recipe is 6 ingredients. SAY WHAT?!?! It literally is that easy, now this recipe does take a little time to cool, it helps the bars stay together and set up, but in reality it’s not that long, maybe 30-60 minutes, or faster if you place it in the refrigerator.
The glaze on top of these Lemon Squares are everything, and its baked right with the bars themselves, so it’s not something that you pour on afterwards.
This lemon bar recipe has the perfect amount of lemon to my liking, and I LOVE LEMON. I mean it’s not overpowering or anything, if you are seeking the lemon flavor than this is just the dessert for you.
HOW TO MAKE CAKE MIX LEMON SQUARES:
- Pre-heat oven to 350.
- Spray a 9″x13″ baking dish with non-stick cooking spray and set aside.
- In bowl mix together cake mix, butter and egg until combined, press into prepared pan and set aside.
- In another bowl whisk together sweetened condensed milk, lemon juice and lemon zest, pour over top of bars.
- Bake for 25-20 minutes until set, remove from oven and let cool completely before cutting into squares.
See, simple. I cant tell you enough how good these bars are, they are one of our favorite to bring to get togethers. They usually go so fast and rarely do I ever have any leftovers, which is sometimes nice but sometimes I wish I did because I’m slightly addicted.

I’m so happy when spring and summer roll around because they I feel like I can make all the lemon things. These lemon squares are just the cusp of the things that I want to make this season, so watch out for some more savory and sweet lemon recipes.
There are so many different recipes that you can make with cake mixes, cookie bars, cake mix bars, cake mix cookies, dump cakes, etc.
Now I’m one who really does like to bake from scratch when I can, but I have never been opposed to using mixes of any sort. And you should never feel ashamed of using them, because some of the best recipes are semi-homemade, trust me.
TIPS AND TRICKS:
- Use melted butter, some people use softened, but melted is the way to go, it gives the texture that I love.
- Invest in a good microplane, I absolutely love my microplane and it is one of my most used kitchen tools, not just for grating lemon zest, but garlic and other things as well, gets finer shreds of the zest.
- Switch up your flavors! Try different cake mix flavors and adding in extracts to your sweetened condensed milk to have a totally different dessert.
- Use whatever brand of cake mix you like, I am not attached to any brands and use whatever I can find, I have found that no certain one makes a difference in texture or flavor.
- Instead of using a sweetened condensed milk, frost with lemon frosting instead! Gives it an amazing flavor!
