Heavy whipping cream
Powdered sugar
Vanilla extract
Butter extract
Butterscotch syrup
Chilled cream soda
HOW TO MAKE BUTTERBEER RECIPE, STEP BY STEP:
- Place the heavy cream, powdered sugar, vanilla extract, and butter extract into a medium-sized bowl. With an electric hand mixer, whip until stiff peaks form.
- Add the butterscotch syrup to the bowl and fold it in gently until there are no streaks left. Place the bowl into the refrigerator until ready to serve.
- In a large bowl or pitcher, add about 1 cup of the cream soda, the butterscotch syrup, and butter extract.
- Whisk until the syrup has dissolved into the soda.
- Add the rest of the soda to the bowl/pitcher and stir to combine.
- Add butterbeer to glasses. Top with the butterscotch whipped cream and more butterscotch syrup if desired, and serve immediately.
CAN I MAKE THIS AHEAD OF TIME?
Absolutely, this is the perfect drink to make for a party and you can make each part separately. Store each part of the drink in the refrigerator separately until you’re ready to serve the chilled drink.
CAN I DOUBLE THIS?
Yes! If you need to make more than 4 servings, this is an easy recipe to scale and increase to make more tasty drinks. We love to double or triple this because we adore it so much that we usually do it all the time anyways.
WHY IS MY WHIPPED CREAM TOPPING SINKING?
When you’re using this butterscotch whipped cream on top of your Butterbeer, you may need to hand whip it to help it come back to life a bit.
If it’s starting to drop or lose shape, just grab a whisk and whip it up a bit. The longer it sits in the refrigerator, the faster it’ll drop.
HOW TO STORE:
When possible, store the butterbeer drink separately from the topping. The drink part will keep for up to 2 weeks in the refrigerator.
The whipped topping will keep for about 3 days. Store them in separate airtight containers in the refrigerator. Wait to assemble until you’re ready to drink and enjoy them.
