Some of my other favorite banana treats we have on our site include: Bananas Foster, Easy Banana Bread and Banana Cookies.
WHY THIS RECIPE WORKS:
- Easy to find ingredients helps these come together quickly.
- The banana and cream cheese frosting pairs together perfectly.
- This makes a nice large batch to serve a crowd.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
All-purpose flour
Baking powder
Fine sea salt
Unsalted butter
Light brown sugar
Mashed banana
Egg
Vanilla extract
Cream cheese
Powdered sugar
HOW TO MAKE BANANA BLONDIES, STEP BY STEP:
- Preheat the oven to 350 degrees F. Line a 9×13-inch baking pan with parchment paper, set aside.
- In a medium sized bowl, whisk together the flour, baking powder, and salt, set aside.
- In a large bowl add the melted butter, brown sugar, mashed banana, egg, and vanilla, whisk until smooth.
- Next, add the flour mixture and stir until combined, making sure there are no dry patches remaining..
- Spread the batter into the prepared baking pan and bake for 30-35 minutes until the edges are slightly golden brown and a toothpick inserted into the center comes out clean. Place the baking pan on a wire rack to cool completely, this helps air get under the pan and cool quicker.
- Next make the frosting, place the cream cheese and butter into a large bowl and with an electric hand mixer beat until smooth.
- Add the powdered sugar a little at a time until combined, scraping down the sides as needed. Add in the vanilla and turn the mixer on to medium speed and beat for 3 minutes until light and fluffy.
- Remove the blondies out of the baking pan by lifting the parchment paper to help grab and remove. Frost blondies, cut into bars and serve immediately.
WHAT ARE THE TEXTURE OF THESE BLONDIES?
These are soft, chewy and moist. They are not on the cake or fudgy side, they are a typical blondie texture.
There are various different textures of blondies, some are more cake like or brownie like, but these are a nice combination between firm, with the nice chew and are also soft.
CAN I USE ANOTHER FROSTING?
Yes! You can absolutely use another frosting for these Banana Blondies. We love the cream cheese and banana together but you do not have to use that combination. We also love to use our Cinnamon Cream Cheese Frosting.
Some other frostings that you can use are regular buttercream, chocolate buttercream, peanut butter frosting, chocolate ganache and more.
WHAT CAN I ADD TO THESE BANANA BLONDIES?
Feel like adding some mix-ins to the batter? These are the perfect recipe to do so! Some of our favorite mix-ins include:
- Chocolate chips
- Peanut butter chips
- Cinnamon chips
- Chopped strawberries
- Chopped nuts like pecans or walnuts
- White chocolate chips
- Coconut
- Butterscotch chips
There are so many flavors that go with banana that the list could be endless!
WHAT ARE THE BEST BANANAS TO USE?
The riper the banana the better! We love baking with bananas that are almost black, they give more sweetness to the recipe.
You will at least want to use bananas that are streaked with brown or black, that means that they are ripe and perfect for baking. They say there is never too ripe of a banana for baking.
You do not really want to use just a regular green/yellow banana. They are firmer and harder to mash, they can be used but the flavor will be different.
HOW TO STORE:
These can be stored in an airtight container in the refrigerator where they will keep for up to 3 days.
These can also be frozen, place in a freezer container (not stacked) where they will keep for up to 3 months.
To defrost, remove from the freezer to the refrigerator overnight until thawed.
TIPS AND TRICKS:
- These need to be refrigerated if using the cream cheese frosting.
- Make sure you use nice ripe bananas for this for more of the banana flavor.
- You can use other frostings, see above for other ideas.
- Additional mix-ins can be used, see above for some of our favorites.
- Make sure these are cooled before frosting.
- The frosting does not crust up, so I do not suggest storing stacked.
- Top with sliced bananas if desired.
- These can be frozen, see above on how to do that.
