Happy Leap Day! Now that is a first that I can actually say happy on a Monday…that doesn’t happen often. But this day only comes around once every 4 years, so one should celebrate accordingly.
Technically today should have been my mothers birthday…any other year. But tomorrow will suffice for her. That is cool with me though, I am making her a birthday cake this year and I haven’t gotten a chance to start on in. She is wanting a lemon cake, woohoo Spring has officially sprung!
Luckily I still have a little time to contemplate what kind of cake I want. In the mean time since I am enjoying the warmer weather I bring to you these Blueberry Lemon Fritters.
So I have a friend who shall not be named that has never heard of a sweet fritter!! Maybe there are more of those types of people out there but when I think of fritters I think of the normal iconic Apple Fritters.
I absolutely love those, so in my fashion I always have to recreate them in different flavors! Here is my Strawberry Fritters (don’t mind the pictures, they need to be redone!) But I’m not biased to just sweet fritters, I’m a savory fritter fan too, so here you can find my Bacon and Cheese Butternut Squash Fritters, seriously awesome!
These are so nummy! Once of those types of desserts/breakfast/brunch types of dishes that are grab and go and you seriously can’t just have one. At least I couldn’t and I have to admit that I try to have some really good willpower.
Usually I have one sweet item a day and that is after supper because I fully believe that I cannot go to bed without having dessert. That is like my golden rule, for me anyways. Ok so maybe I have 2 sweet things during the day. I kinda munch on one throughout the day, picking piece off here and there. It is what it is, no shame.
Bust out your deep fryers ladies and gents! I’m sorry for those who are wanting to be a little healthier, I do not have a baked recipe for these yet, but I will be on a mission to create one! These are one of the easiest recipes you will create!
Mix everything up, drop it in and take it out. Simple as that. These Blueberry Lemon Fritters will be your next fave go to breakfast! Do you have a favorite fritter recipe?
Blueberry Lemon Fritters
Ingredients
- 1 1/4 cup flour
- 1/3 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1 egg lightly beaten
- 1 Tbs melted butter
- 1/2 tsp vanilla
- 1 tsp lemon zest
- 1 cup blueberries
- Oil for frying
GLAZE
- 1 1/2 cup powdered sugar
- 4-5 Tbs lemon juice
- Zest of 1 lemon
Instructions
- Pre-heat your deep fryer to 375.
- In bowl whisk together your flour, sugar, baking powder and salt.
- In separate bowl mix together your milk, egg, vanilla, butter and lemon zest.
- Slowly mix into your dry ingredients until just combined.
- Fold in your blueberries gently.
- Drop by Tablespoonfuls into hot oil and fry turning a few times for 3-4 minutes.
- Turn out onto paper towel lined plate to drain.
- To make glaze stir together your powdered sugar, lemon juice and lemon zest.
- Dip each of your fritters into the glaze and let set for a few minutes.

Hi Michaela, I don’t see why you couldn’t. It should heat them enough to cook them. Otherwise let the defrost a little before adding to batter.

I made these for breakfast this morning. Melted butter was listed in the ingredients, but not the directions, so I assumed that I added it in to the wet mix. The batter turned out lovely.
I would warn novice fryers that you do not want to use a shallow pan for these. An electric deep fryer or deep pot on the stove will prevent mess and burns from the popping blueberries.
Also, I tried these plain, with a dusting of powdered sugar, and with the glaze. If anyone plans to serve these without the glaze, I would add a half teaspoon or so of cardamom to the batter to amp up the flavor. The glaze creates a delightful tanginess that highlights the sweetness of the berries.
