With bacon, corn, onion, tomatoes and a tasty dressing. You really cannot go wrong with the flavor in this Bacon and Corn Pasta Salad.
We love to serve this warm, but you can serve it cold if you wish. But I highly suggest warm as that is how we usually serve it.

INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Bacon
Reserved bacon grease
Red onion
Corn
Garlic
Apple cider vinegar
Granulated sugar
Dijon mustard
Pepper
Cherry tomatoes
Parmesan cheese
Bow tie pasta
Basil leaves
Salt to taste
HOW TO MAKE BACON AND CORN PASTA SALAD, STEP BY STEP:
- In a large pot or Dutch oven, cook the bacon until crispy. Reserve ⅓ cup of the bacon grease. Drain the bacon and set it aside.
- Wipe out the pot and add the reserved bacon grease over medium heat.
- Add the onion and cook until softened, about 5-8 minutes.
- Add the corn and cook an additional 5 minutes, stirring often.
- Add the garlic and cook until fragrant, 30 seconds.
- Take off the heat, add the vinegar, sugar, Dijon, and pepper. Stir to combine.
- Stir in the bacon, tomatoes, and parmesan.
- Add the pasta and combine well.
- Finally, stir in the fresh basil.
- Taste and add salt if desired. Serve immediately.
WHAT IS THE BEST CORN TO USE?
We use fresh corn for this recipe, it takes about 3 large ears to get 2 cups.
You can use frozen corn as well, just let it thaw first. Canned corn works if well drained.
CAN I USE ANOTHER TYPE OF PASTA?
Absolutely, we love bowtie for this just because we use it a lot in pasta salads.
Other pastas that you can use include: elbows, penne, cavatappi, fusilli and rotini.
Essentially any smaller pasta you can use, just make sure that you are using the same amount that is called for on the recipe.
DOES THE PASTA SOAK UP THE SAUCE WHEN IT IS STORED?
The pasta will soak up the vinaigrette, so if you have leftovers, I suggest making extra and stirring it in before serving again.
CAN THIS BE SERVED COLD?
While we absolutely love this warm and thats how we usually serve it, you can serve this cold if you want.
You will want to make sure to really stir it well before serving to redistribute the dressing.
HOW TO STORE:
This Bacon and Corn Pasta Salad can be stored in an airtight container in the refrigerator where it will keep for up to 3-4 days.
I do not recommend freezing this recipe.

- Make sure you are using freshly grated parmesan cheese.
- Your tomatoes need to be cut in half.
- You can use other pastas if you’d like, see above for some ideas.
