Want an easy, minimal ingredient show stopping dessert? This Apple Spice Piecaken is a moist spice caked stuffed with a full apple pie, perfect for the holiday season.
Piecakens are one of my favorite things. You get two desserts in one, they are easy to make and seriously are show stopping desserts when you whip them out at the end of your meal.
Every year for the past three years we have been making some sort of piecaken, this year we made this Apple Spice version. You need to go check out my Pumpkin Spice Piecaken and my Chocolate Pecan Piecaken for more inspiration.
WHY THIS RECIPE WORKS:
- With a doctored up cake mix, you only need minimal ingredients to make this work.
- You can use a bakery pie or homemade pie as long as they are fully cooked and cooled.
- You get two desserts in one, the cake fully encases the pie which keeps it in tact and a delicious and fun flavor and texture contrast with each bite.
This is NOT your traditional dessert, heck you may not have even ever hear of a Piecaken before. But trust me, they are such a fun and simple dessert that you just have to whip one up to see.
HOW TO MAKE APPLE SPICE PIECAKEN, STEP BY STEP:
- Preheat oven to 350 and spray a 10″ springform pan with non stick cooking spray. In large bowl add your cake mix, milk, butter and eggs.
- Beat with hand mixer until everything is blended and combined.
- Spread half of your cake batter into bottom of your springform pan, spreading it well to the sides.
- Carefully add your pie top down into the cake batter.
- Spread remaining batter over top and around sides of pie spreading out as evenly as you can and bake for 1 hour to 1 hour 10 minutes.
- To make your frosting in a bowl add your cream cheese and butter.
- Beat until combined and light and fluffy.
- Add in your powdered sugar and vanilla.
- Beat until combined and smooth, once cake is cooled frost the top of the cake.
There are almost endless flavors when it comes to making a Piecaken. While we have done the Chocolate Pecan, Apple Spice and Pumpkin Spice there are so many other flavors you can do based on season.
Want some fun spring and summer flavors? How about a lemon cake with a blueberry pie, strawberry pie with a white cake or cherry pie with a yellow cake.
When it comes to fruit pies I really do recommend that it is a double crust, otherwise the pie should be really chilled before placing into the cake batter.
If it were to be too warm, you run the risk of the filling falling out and spreading into the batter and then you wouldn’t get the nice structure of the cake encasing your pie.
We went with a cream cheese frosting for this Apple Spice Piecaken recipe, it really complemented both the flavors of the apple and the spice really well.
While we use a doctored up cake mix recipe here, you can fully make your own homemade cake if you would like, as long as it is made to fit in a 10″ pan size.
TIPS AND TRICKS FOR MAKING APPLE SPICE PIECAKEN:
- Make sure your pie is chilled before placing it in the cake batter, this helps keep it together so it doesn’t fall apart when placing it in.
- Place the pie top side down, you will be flipping this cake over after baking so the pie will appear top up when serving.
- Cooking times vary, usually it takes 60 minutes, but check with toothpick for doneness before removing from oven.
- Fully cool your cake before frosting and serving, we stick ours in the refrigerator to help cool quickly.

Apple Spice Piecaken
Ingredients
- 1 box spice cake
- 1 1/4 cup milk
- 1 cup butter melted
- 4 eggs
- 1 9 or 10" apple pie bakery or fresh baked and cooled
FROSTING:
- 1 8 oz pkg cream cheese, softened
- 3 Tbs butter softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla
Instructions
- Preheat oven to 350.
- Spray a 10" springform pan with non-stick cooking spray.
- In large bowl mix together cake mix, milk, butter and eggs until combined.
- Spread half of your cake mixture into bottom of prepared pan.
- Place pie facedown into pan so the bottom of the pie points up.
- Spread remaining cake batter on top of pie and spread out covering the whole thing.
- Bake for 1 hour to 1 hour 15 minutes covering with tinfoil after about 45 minutes if it is browning too fast, until toothpick inserted in center comes out clean.
- Remove from oven and let cool.
- To make frosting in bowl add your cream cheese and butter and beat until smooth.
- Add in your powdered sugar and vanilla and beat until until smooth.
- Spread over the top of cooled cake.
