A fluffy and delicious treat this Lemon Cookie Salad is the perfect picnic food, sweet treat or quick dessert that a whips up in a matter of minutes.
You guys, this has to be one of my most favorite desserts ever! If you’ve ever heard of the elusive Cookie Salad before, this one trumps it. Well maybe, I mean I’m still the absolute biggest fan of the regular cookie salad but this Lemon Cookie Salad gives it a nice warm weather twist that everyone can enjoy!
What is cookie salad for those of you who may not know, well let me enlighten you and change your world my friends! Traditional cookie salad is a mixture of French vanilla or vanilla pudding, buttermilk, cool whip, fudge stripe cookies and mandarin oranges. I do not usually add the mandarin oranges, but I can’t attest to how they taste in the salad either since I’ve never ever had them in it, but traditionally they are stirred in.
Now what is the Lemon Cookie Salad? Well technically the same basic ingredients, lemon pudding, buttermilk, cool whip, shortbread pudding and a little texture twist of coconut. You guys…these flavors combined are complete heaven. Heaven I tell you. And this girl tells no lies…I cross my big old heart on that one! I was super nervous that my kids wouldn’t like this dessert because they are so addicted to the normal version. Boy was I wrong.
One bite of this and they were hooked, and so was I. I mean it was one where I couldn’t even hardly keep around long enough to take pictures of, so make sure that you DOUBLE this recipe if you’re taking it anywhere…because it’s almost a garantee that the bowl will be licked clean. Well at least that is what will happen in this here situation.
Other than being absolutely delicious, this Lemon Cookie Salad whips up in minutes! Now you could let it chill in the fridge for awhile to thicken, but absolutely not necessary! Also, you could opt to not stir in the cookies until you are ready to serve, but I love my cookies a little soggy, always have, always will!
So if you’re in the market of switching up your potluck dish, are in a rut on a quick weeknight dessert or you just feel like something thats lemon and amazing then this salad is what you need!
Lemon Cookie Salad
Ingredients
- 1 pkg instant lemon pudding mix
- 1 cup buttermilk
- 1 (8 oz) tub cool whip
- 1 (11 oz) pkg classic shortbread cookies, broken into little pieces
- 3/4 cup sweetened shredded coconut
Instructions
- n bowl mix together your pudding and buttermilk until thickened.
- Fold in your cool whip.
- Add your cookies and coconut and stir until combined.
- Refrigerate until ready to serve.
