A fun twist on classic tacos this One Pot Taco Gnocchi is fast fix family favorite that will be the perfect addition to your weekly meal plan.
I really like tacos, like really like them. My kids beg me all the time to make them at home, so the actual sheer amount that tacos are made in my house can become overwhelming to say the least. I’m sure anyone with kids who found there flavor know what I mean, heck even adults can. With my mom its making spaghetti for my dad, I’ve never met someone who now hates spaghetti as much as her.
So since I am making tacos all the time I figured I’d better come up with some new clever ways to serve them. Not to mention that my kids can be a bit impatient when it comes to wanting to eat so whatever I make it has to be pretty quick and easy! Welcome One Pot Taco Gnocchi.
Ok let me just start off by saying that I’m a huge fan of gnocchi. But to be honest with you, I’m from Minnesota and we have something here called Klub. It’s a large potato dumpling about the size of a softball that has bits of chopped ham inside and is served with butter and salt.
It tastes exactly like gnocchi, so when I first started off eating gnocchi, I would serve it with butter and salt. I know weird right?!?! The most odd way of eating it, but when you’re used to eating something a certain way and it is so similar, you get used to eating it that way.
Luckily these day’s I’ve branched out on my gnocchi loving journey and started actually making kid and other human approved meals with it, like this One Pot Taco Gnocchi! Who doesn’t love one pot meals anyways? Less clean up, which is always amazing in my book when you have no dishwasher other than your two hands.
You can dress this dish up however you like. The base starts with hamburger, taco seasoning, beef broth, tomatoes and gnocchi and cheese. Easy peasy right? You can top it with all of your favorite taco toppings like sour cream, olives, jalapenos, cheese, etc. The sky’s the limit with this.
Plus it’s also good reheated, which is great because I love leftovers. I don’t always have them, but this recipe makes a large batch and I had some the next day for lunch and mmmm, just as good as that first day! It’s a quick and easy lunch too.
So if you’re tired of you same old taco rut, but you’re still looking for something that tastes similar and whips up just as fast then this One Pot Taco Gnocchi is just for you. It’s kid approved and husband approved so that says something!
One Pot Taco Gnocchi
Ingredients
- 1 1/2 lb ground beef
- 1 pkg taco seasoning
- 1 15 oz can petite diced tomatoes
- 2 16 oz pkg gnocchi
- 2 cups beef broth
- 1 cup cheddar cheese
- Sour cream
- Black Olives
- Green Onions
Instructions
- In large skillet brown your ground beef until done, drain.
- Add in you taco seasoning and stir to combine.
- Add in your tomatoes, beef broth and gnocchi and cover and bring to boil. Reduce heat and simmer until gnocchi is tender and sauce has reduced.
- Stir in your cheese an heat until melted.
- Serve in bowl or plate topped with your favorite taco toppings

Yes, gnocchi will cook quickly in hot liquid so that should be fine.
