This easy Wassail Recipe is the perfect warm fall drink to enjoy on a chilly day. Whenever I see chilly weather on the forecast, I grab the slow cooker so we can have a batch ready to go.
The Wassail is so warm and comforting and it’s kid-friendly. What really makes it special are all the warm spices, they’re mixed with a blend of fruit juices to create the perfect drink combination.
Everyone loves when I make this recipe because it makes the house smell sooooo good! Ditch the candle and let the aroma of this Wassail Recipe waft through the house.
We love making this in our slow cooker as we can make more and like I said with it sitting in for a few hours your house will smell as amazing as this tastes.

INGREDIENTS NEEDED (FULL RECIPE AT BOTTOM)
Apple cider
Orange juice
Lemon juice
Light brown sugar
Honey
Star anise
Cinnamon sticks
Whole allspice
Whole cloves
Ground ginger
Ground nutmeg
Granny Smith apple
Honeycrisp apple
Navel orange
HOW TO MAKE A WASSAIL, STEP BY STEP:
- Add the apple cider, orange juice, lemon juice, brown sugar, honey, star anise, cinnamon sticks, allspice, cloves, ginger, and nutmeg to an 8-quart slow cooker. Stir to combine.
- Add the apple and orange slices, stir them in to coat them in the liquid.
- Add the lid and cook on high for 2 hours or low for 4 hours, occasionally stirring if you can. Place the slow cooker on the warm setting and serve.
CAN I MAKE THIS ON THE STOVETOP?
Absolutely, if you do not want to wait around for this amazing Slow Cooker Wassail, you can make this on the stovetop.
To do this, add all of your ingredients to a large pan. Over medium-low heat bring it to a boil. Reduce heat and simmer for 45 minutes, stirring occasionally.
WHAT APPLES SHOULD I USE?
You can use whatever apples you prefer. I used some tart Grany Smith apples and some sweet Honeycrisp apple slices so I had a mix of sweet and tart.
But, you can use whatever apples you enjoy. Some of our other favorites include: Jonagold, Gala, Pink Lady, Golden Delicious, etc.
CAN I ADD ANYTHING ELSE TO THIS DRINK?
The ingredients listed are the traditional ones used in this recipe. But, if you want to add more things in, you can add some pineapple juice to make it sweeter, or cranberry juice to bring a bit of a bite.
Maybe add some fresh or dried cranberries and some pineapple chunks. You can doctor this up however you like.
HOW TO STORE:
This can be stored in an airtight or lidded pitcher in the refrigerator where it will keep for up to 3 days.
Alternatively, you can freeze this recipe for up to three months. Transfer the liquid to a freezer safe container and always leave room for expansion of the liquid as it freezes.
To defrost, remove to the refrigerator until thawed. To warm this up again, use the slow cooker, stove top, or microwave until it reaches your desired temperature.
TIPS AND TRICKS:
- You can use a 1/4 teaspoon ground allspice or ground cloves if you don’t have whole.
- Adding other things is totally acceptable, I shared some ideas above.
- I like to use both brown sugar and honey as it brings such an amazing depth of flavor and the honey helps your throat. But if you don’t have one or the other, just sub with more of what you have on hand.
- If you don’t like a light licorice flavor then you can leave the star anise out. There’s nothing else you need to use in its place.
- When storing this on the warm setting, only do so up to 4 hours. This will continue to cook, allowing the liquid to evaporate over time and in return, makes the drink even stronger. The spices will become more prominent the longer it cooks, so keep that in mind when you are storing it on the warm setting.
- You can enjoy this cold, but if you want to reheat it, see the method suggestions above.
- Freezing this is totally doable, see my tips above.
