A fun and tasty holiday or anytime treat, these Waffle Cookies are easy, delicious and perfect for everyone.
I love cookies, mostly because you can get cookies in all different sorts. These Waffle Cookies have to be one of my favorite.
We usually make these around the holidays and add them to our cookie/dessert platters that we give out to family and friends.
Also we always make two variations, now you don’t have to but who doesn’t love a mixture of chocolate and vanilla?
It’s not just about the flavor of these cookies it’s about the texture as well, if you are a fan of waffles, then these Waffle Cookies are right up your alley!
With on hand ingredients, these are super easy to throw together and do not take a long time at all!

WHY THIS RECIPE WORKS:
- Having a mixture of both vanilla and chocolate is the best of both worlds.
- Easy ingredients have these coming together in no time.
- They are super fun to decorate and you can do that however you see fit.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Granulated sugar
Unsalted butter
Coffee (optional)
Eggs
Cocoa powder
Vanilla extract
All-purpose flour
White chocolate chips
Semi-sweet chocolate chips
Sprinkles, for decorating
Powdered sugar, for decorating
HOW TO MAKE WAFFLE COOKIES STEP BY STEP:
BATTER:
- Preheat your waffle iron, set aside.
- In a large bowl, combine the melted butter and granulated sugar. Mix with a whisk until the sugar is fully integrated.
- Add the eggs one at a time, beating vigorously until the mixture is creamy.
- Add the salt and vanilla extract and mix until combined.
- Divide the mixture into two halves.
- To one half, gently fold in half of the flour, cocoa powder, and coffee, mix until combined.
- Then add in the white chocolate chips into this half of the mixture.
- Next, to the other half of the mixture, add the remaining flour and mix until combined.
COOKING/DECORATING:
- Using a Tablespoon cookie scoop, scoop out a portion of the batter and place in a preheated waffle iron and cook for about 5 minutes. (If the batter is spreading too much, chill your batter for 30 minutes then try again).
- Once cooked, remove and set aside on a plate. Repeat with all remainin batter.
- In a bowl, add about 1 cup semi-sweet chocolate and melt in the microwave in intervals of 15-30 seconds.
- For the vanilla cookies, dip half of each cookie into melted dark chocolate and decorate with sprinkles.
- For the chocolate cookies, dust with powdered sugar and serve.
CAN I USE ANOTHER FLAVOR OF CHOCOLATE CHIP?
Both in the chocolate cookies and for dipping the vanilla cookies you can use other chocolate chips.
If you are not a fan of white chocolate chips, you can add semi-sweet, milk or dark to the batter or just leave them out.
For the dipping of the vanilla cookies you can go sweeter with milk chocolate chips or darker with dark chocolate chips.
WHAT KIND OF WAFFLE IRON WORKS BEST?
Use whatever waffle iron you have at home minus a Belgian one, it can be a round or square one. We used a square one in this recipe.
Just make sure that you separate each portion into the different segments of the waffle iron – each should have that option (most do anyways).
WHY DO I NEED TO PREHEAT MY WAFFLE IRON?
Just like when you are making waffles, you want to preheat the waffle iron so that nothing sticks.
You can also take an extra measure and spray the waffle iron with non-stick cooking spray.
CAN I ADD ANYTHING ELSE TO THE BATTER OR TO DECORATE THE WAFFLE COOKIES?
Absolutely, have free reign over these cookies there are always some fun additions and decorations that you can use.
Some ideas that we can think of include:
- Chopped Nuts (in batter)
- Chocolate Chips (in vanilla cookies)
- Decorators Sugar instead of sprinkles
- Chopped Dried Fruit in cookies
- Peanut Butter Drizzle (on chocolate cookies)
- Powdered sugar on all cookies
There are so many variations that you can make, as long as you stick to the original batter recipe, you can add additions and they should not change the cookie.
HOW TO STORE:
These can be stored in an airtight container at room temperature where they will keep for up to one week.
They can also be frozen, make sure they are completely cooled and then place in a freezer container and they will keep for up to 2-3 months.
To defrost remove to the countertop until thawed.
TIPS AND TRICKS:
- You can choose to make all vanilla or all chocolate for this recipe, if all chocolate double the cocoa powder, white chocolate chips and coffee (if using).
- These can be frozen, see above on how to do that.
- Make sure that your waffle iron is preheated so they do not stick.
- Depending on how much you scoop out these can make more or less cookies.
- For a crispier cookie add a few more minutes onto the cooking time.
- Other additions and decorations can be used, see above for some ideas.
- The cookies are done when they are golden brown and slightly crisp on the edges.
- You can chill the dough for about 30 minutes to prevent spreading if they do spread.
