WHY THIS RECIPE WORKS:
- This makes a large batch, but you can always double it to have more on hand or to give as gifts.
- We use dark chocolate but you can use other chocolate if you desire.
- Soft and chewy, they are the perfect balance of flavor.
INGREDIENTS NEEDED (FULL RECIPE AT THE BOTTOM OF THE POST):
Powdered sugar
Evaporated milk
Corn syrup
Peppermint extract
Vanilla extract
Shortening
Coconut oil
Dark chocolate chips or chunks
HOW TO MAKE HOMEMADE PEPPERMINT PATTIES, STEP BY STEP:
- Add powdered sugar, milk, corn syrup, extracts, and shortening to a mixing bowl and mix until combined.
- Roll the mixture into 1-inch balls using a cookie scoop or your hands and place on prepared pan.
- Flatten each ball into ยผ-inch thick, using a spatula, the bottom of a glass, or even the palm of your hand.
- Chill patties in the refrigerator or freezer for 1-2 hours.
- Add coconut oil and chocolate to a small heat-proof bowl and microwave for 90 seconds in 15 second increments, stirring between each one until smooth.
- Using a fork, dip each patty into the chocolate, coating entire thing, then placing back onto baking sheet.
- Refrigerate until chocolate is set, about 30 minutes.
- Serve and enjoy.
CAN I USE A DIFFERENT TYPE OF CHOCOLATE?
Yes, I know not everyone’s favorite chocolate is dark so you can also use semi-sweet and milk chocolate for this recipe as well.
WHY DO THESE NEED TO BE CHILLED BEFORE COATING IN CHOCOLATE?
The mixture itself is sticky, which can be offset by using some powdered sugar with handling.
When you dip it into the warm chocolate we want to make sure the patties are solid enough to not melt. So this is one step you absolutely do not want to skip.
CAN I TOP THESE WITH ANYTHING?
If you want to make them a little more pretty or give them some more flavor you can absolutely top them when the chocolate is still warm. Some ideas include:
- Crushed Candy Canes
- Sprinkles
- Toffee Bits
- Decorators Sugar
- White Chocolate Drizzle
- Crushed Oreos
These would be cute topped with any decorations or anything that you think would compliment the flavor.
CAN I MAKE THE FILLING AHEAD OF TIME?
Yes, since these have to be chilled before dipping this is a great time saver. Just make your filling before hand 24-48 hours and store in the refrigerator until you are ready to dip in the chocolate.
HOW TO STORE:
These can be stored in an airtight container at room temperature where they will keep for up to 2-3 days or in the refrigerator for up to 2 weeks.
You can also freeze these Homemade Peppermint Patties. Place in a freezer container and they will keep for up to 3 months.
To defrost, place in the refrigerator or countertop until thawed and enjoy. They can also be enjoyed from their frozen state.
TIPS AND TRICKS:
- Use semi-sweet or milk chocolate chips instead of dark.
- The filling can be made ahead of time, see above on how to do that.
- Do not skip the chilling of the filling, this is essential so that it doesn’t melt when dipped in the chocolate.
- These can be frozen, see above on how to do that.
- Top these with decorations or other ingredients. We listed some ideas above.
- If the filling is too sticky to work with, use some powdered sugar to make it easier to handle.
