Preheat your waffle iron, set aside.
In a large bowl, combine the melted butter and granulated sugar. Mix with a whisk until the sugar is fully integrated.
Add the eggs one at a time, beating vigorously until the mixture is creamy.
Add the salt and vanilla extract and mix until combined.
Divide the mixture into two halves.
To one half, gently fold in half of the flour, cocoa powder, and coffee, mix until combined.
Then add in the white chocolate chips into this half of the mixture.
Next, to the other half of the mixture, add the remaining flour and mix until combined.
Using a Tablespoon cookie scoop, scoop out a portion of the batter and place in a preheated waffle iron and cook for about 5 minutes. (If the batter is spreading too much, chill your batter for 30 minutes then try again).
Once cooked, remove and set aside on a plate. Repeat with all remainin batter.
In a bowl, add about 1 cup semi-sweet chocolate and melt in the microwave in intervals of 15-30 seconds.
For the vanilla cookies, dip half of each cookie into melted dark chocolate and decorate with sprinkles.
For the chocolate cookies, dust with powdered sugar and serve.
